How To make Cincinnati Style Chili
2 tablespoons vegetable oil
2 medium onions
chopped
5 cloves garlic :
minced
2 pounds ground beef chuck
4 tablespoons commercial chili powder
1 tablespoon sweet paprika
1 teaspoon ground cumin
1/2 teaspoon allspice
1/4 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground coriander
Salt and fresh ground black pepper 1 bay leaf
1 tablespoon red wine vinegar
1 tablespoon molasses
1 cup tomato sauce
1 1/2 cups water
Spaghetti cooked and drained; kidney beans; grated Cheddar; chopped white onion :
and oyster crackers as traditional accompaniments for Cincinnati 1 " Five-Way" chili
In a large heavy pot heat the oil over moderate heat and cook the onions and garlic until softened. Add the ground beef, stirring, until the beef is no longer pink. Drain off any excess fat and discard. Add the chili powder, paprika, cumin, allspice, cinnamon, cloves, coriander, salt and pepper, to taste, stirring to combine and cook for 1 minute. Add the bay leaf, red wine vinegar, molasses, tomato sauce and water and bring to a boil. Reduce heat and simmer chili, covered for 1 1/2 hours, adding additional water, if necessary, to achieve a thick and soupy consistency. Discard bay leaf and adjust seasoning with salt and pepper.
Serve the chili over cooked spaghetti with the traditional accompaniments.

If you're wondering what exactly happened 100 years ago, it was Oct. 24, 1922, when Empress Chili first opened its doors. And, boy howdy, look how far and wide our food staple has reached since then. It basically defines Cincinnati's place in the world. And we're OK with that.
The Enquirer staff tried a blind taste test of local chili and tries to guess which one is which. Here's how we did.

How To Make Cincinnati Chili (Skyline 3-Way Style)
If you're not from Cincinnati this bizarre regional dish may look insane to you but rest assured it's one of the most delicious meals you can make right in your own home.
INGREDIENTS
2 LBS GROUND BEEF
2 TSP SALT
3 TSP UNSWEETENED COCOA POWDER
2 TSP CINNAMON
1 TSP GARLIC POWDER
1 TSP GROUND CUMIN
1 TSP PAPRIKA
¼ CUP CHILI POWDER
½ TSP BLACK PEPPER
½ TSP ALLSPICE
½ TSP GROUND CLOVE
1 TSP SUGAR
1 FINELY DICED YELLOW ONION
6 CUPS WATER
1 6OZ CAN TOMATO PASTE
1 8OZ CAN TOMATO SAUCE
2 TSP WORCESTERSHIRE SAUCE
1 TSP APPLE CIDER VINEGAR
RECIPE
IN A LARGE POT OR DUTCH OVEN COOK TOMATO PASTE ON MEDIUM HEAT UNTIL CARAMELIZED AND A NICE BRICK RED COLOR (ABOUT 4 MINUTES).
ADD IN TOMATO SAUCE, WATER, MEAT.
USE A POTATO MASHER OR WOODEN SPOON TO CRUSH UP THE MEAT UNTIL MIXTURE REACHES A THIN, SOUPY CONSISTENCY.
MIX IN REST OF SPICES, WORCESTERSHIRE SAUCE AND APPLE CIDER VINEGAR.
BRING TO A BOIL AND LET SIMMER FOR 1 HOUR (OR 2 HOURS IF YOU PREFER A THICKER CONSISTENCY).
PREPARE SPAGHETTI OR HOT DOG AND SERVE HOT COVERED IN CHILI AND A MOUNTAIN OF SHREDDED YELLOW CHEDDAR CHEESE WITH A SIDE OF OYSTER CRACKERS AND HOT SAUCE.
