Cincinnati Chili Recipe (Chili Cheese Dogs) | I Heart Recipes
Hey y’all! If you’ve never had Cincinnati Chili, you’ve got to give it a try. Here’s my recipe for authentic Cincinnati Chili.
I lived in Ohio for just a couple of months when I was 16, and that is when I fell in love with Cincinnati Chili. Everything about it is amazing. The flavors and aroma, even the texture. I had to recreate this dish and make it my own. Watch my tutorial to see how I make my version of Cincinnati Chili.
Start by browning ground beef. You can use ground turkey, but I prefer beef. Add in a good amount of chopped onions, a little water and a can of tomato sauce, and give it a stir. I use a homemade Cincinnati Chili spice mixture as my local grocer doesn’t carry it prepackaged. My spice mixture is super simple and so good. Add this to the meat along with minced garlic and vinegar. Next add in unsweetened chocolate. You read that right, y’all! Unsweetened chocolate is a key ingredient to authentic Cincinnati chili. It gives it a rich flavor and a nice dark color. Stir until the chocolate is melted. Simmer for 2-½ hours, making sure to stir periodically so the bottom doesn’t burn. There are two popular ways to serve this chili. One way is to serve over a bed of spaghetti and the other is to spoon it over a hot dog. Whichever way you decide, top with shredded cheese and onions, and you’re good to go!

0:25 - Brown the beef.
0:30 - Drain the fat.
0:36 - Add in finely chopped onion.
0:39 - Stir.
0:45 - Pour in water.
0:51 - Pour in tomato sauce.
0:58 - Mix well.
1:06 - Add minced garlic.
1:08 - Pour in white vinegar.
1:15 - Sprinkle in spices.
1:22 - Stir well.
1:33 - Add unsweetened chocolate.
1:50 - Stir until chocolate is melted.
2:05 - Let simmer for 2-½ hours.
2:25 - Skim off excess fat.
2:45 - Serve the chili over spaghetti.
2:54 - Top with shredded cheddar cheese.
3:03 - Serve on top of a hot dog.
3:10 - Top with shredded cheddar cheese.

Skyline Chili Recipe / Original Cincinnati Recipe
Skyline Chilli Ingredients:
- 2 lbs hamburger
- 2 cups chopped onion
- 4 cups beef broth
- 16 ounces of tomato sauce
- 3 Tbs chili powder
- 2 Tbs apple cider vinegar
- 2 Tps Worcestershire Sauce
- 3 Tbs cocoa powder
- 2 tsp minced garlic
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp cayenne pepper
- ¼ tsp ground all spice
- ¼ ground cloves
- 1 bay leaf
Optional Toppings:
- Shredded Cheddar Cheese
- Chopped Onion
- Kidney Beans
• In a large skillet over medium heat, add ground beef and onions. Saute until onions are translucent and beef is no longer pink. Drain.
• Reduce the heat to low and pour the beef stock. Simmer for 10 minutes.
• Mix in the tomato sauce, chili powder, apple cider vinegar, Worcestershire sauce, unsweetened chocolate or cocoa powder, minced garlic, cinnamon, cumin, salt, red or cayenne pepper, allspice, cloves, and bay leaf or bay leaf powder. Simmer, uncovered, for 1 hour.
• Remove the bay leaf (if using) and spoon off the layer of grease on the surface.
• Serve over spaghetti noodles or on top of hot dogs. Top with cheese and other optional toppings. Enjoy!

Cincinnati Chili Recipe - Chili is a dish that has literally 100’s of different recipes. They vary by region, ethnicity, chili color, ingredients, and intangibles such as what to serve with your favorite type of chili. There are multiple Chili cook-offs in every city every year. Nothing says comfort food in the US more than Chili.
One of the most unique types of Chili is Cincinnati-style Chili. For those who grew up in Cincinnati or lived there for any significant length of time, you can’t help but take sides in the Skyline Chili ( vs Gold Star Chili ( debate. There are as many Skyline/Gold Star locations in Cincinnati as there are McDonald’s. They all have a drive-thru, just like McDonald’s.
This is not a true Cincinnati chili recipe because 1) I use ground Turkey and 2) I don't boil the meat. But the flavor palate is there. So if you can't get to a drive-thru in Cincinnati, try this recipe for a tasty alternative to Cincinnati Chili.
