Cowboy Chili Recipe!
We’re taking the chill off in the kitchen today with our Chili recipe. What’s great about chili is you can substitute any kind of meat whether is ground beef, wild game or even chunk meat. We’re giving you a great seasoning base and some ideas for your chili and from there you can customize to suit your tastes. Beans- no beans… hey I like a bean to give it an even heartier feel. So we hope you enjoy our chili recipe!

8- 10 servings
Cowboy Chili
2 pounds ground beef (wild game, chunk meat, etc.)
1 large yellow onion, chopped
2 (10 oz.) can Rotel (we used chunky), drained
1 Rotel can water
1 (15 oz) can tomato sauce
1 (16 oz) can kidney beans, drained (or your bean choice)
Green Chile Chipotle Relish (available or 3 - 4 chipotle peppers in adobo sauce, chopped or to taste
1/3 cup chile powder
½ tsp cumin
2 tsp oregano powder
2 tsp paprika or smoked paprika
2 tsp salt
3 tsp minced garlic
1. In a large pot or 12” Dutch oven brown the hamburger over medium high heat. Season with salt and pepper or seasoning of your choice, to taste. As the meat begins to brown, stir in the onions. Continue cooking until the meat has fully browned and onions are tender. If there is a lot of excess grease, drain.
2. Stir in the Rotel, water, tomato sauce, beans, chipotle peppers or relish. Stir in the seasonings. Adjust taste, if needed.
3. Cover and cook over medium-high heat until it reaches a boil. Boil a couple minutes. Reduce heat and simmer for about 40 minutes, stirring occasionally.
4. Serve warm with cheese, onions, sour cream, etc.

On a ranch near the very small town of Seymour, Texas, cowboys fuel up for hard work. Kent and Shannon Rollins are cooks who prepare their cowboy meals-on-wheels on an actual, working chuck wagon. Scott Simon reports on the secrets to cowboy cooking.

Beef stew
Ingredients:
4 Lbs Beef Chuck Roast (cut into cubes)
1 Onion (diced)
3 Ribs Celery (diced)
3 Carrots (diced) + 4 Carrots (sliced)
2 Cups Russet Potatoes (quartered)
4 Garlic Cloves (minced)
2 Tbsp Tomato Paste
1/3 Bottle Cabernet Wine
1 Tbsp Rosemary (chopped)
2 Sprigs of Thyme
2 Bay Leaves
4 Cups Beef Stock
3 Tbsp Corn Starch + 6 Tbsp Cold Water (slurry)
Olive Oil
Parsley (chopped)
Salt and Pepper
Instructions:
In a large bowl add the beef cubes and season with olive oil, salt, and pepper.
In a large pot or Dutch oven on medium heat. Add oil and sear the beef in batches. Remove the beef from the pot and set aside.
Next add diced onion and caramelize slightly. Add celery, carrots, and garlic. Sauté till fragrant then season with salt and pepper.
Once the vegetables are softened, add tomato paste and brown slightly. Deglaze with red wine and bring to a simmer. Add the seared beef back to the pot along with rosemary, thyme, and bay leaf. Cover with beef stock. Season with more salt and pepper. Cover with a lid and braise in the oven set to 325 degrees Fahrenheit for 1.5 hours.
After 1.5 hours, add sliced carrots and potatoes. Continue to braise for another 1.5 hours until the beef is tender and the potatoes are soft. Next combine corn starch and cold water together making a slurry. Add the slurry to the simmering stew a little at a time until thickened to your desired thickness. Adjust the seasoning to your taste. Serve in a bowl and garnish with chopped parsley.

Beef Stew Recipe Ingredients:
1/4 cup Flour
The Level Up Series B Rub -

3 Tbsp cold butter, separated
2 cups Yellow Onion, diced

4 cups Beef Broth
2 tsp better than bouillon
2 tbsp Worcestershire Sauce
3 tbsp Tomato Paste
5 medium sized Carrots, cut into ¼ inch cubes
1 lb. Baby Yukon Gold Potatoes, halved or quartered
2 Bay Leaves
1 Rosemary branch
1 cup Frozen Peas
1/2 cup Celery
1/4 cup Cold Water + 3 tablespoons Corn Starch, Optional
2 - 3 drops Kitchen Bouquet Browning and Seasoning Sauce

Having fun cooking Chuck Wagon Stew in a Dutch oven over a campfire. This is so easy to do out camping. It tastes great too.

Chuck Wagon Stew
12” Dutch oven
Ingredients:
1. 2lbs cubed chuck roast or stew met
2. ½lb smoked pork sausage (pork or beef) sliced 1” thick
3. 1 medium onion chopped
4. 2T oil
5. 4 potatoes peeled and cubed
6. 1 28oz. can of Barbecue Baked beans
7. 1t black pepper
Directions:
Preheat a 10” Dutch oven over a campfire or briquettes. Add 2T of oil. When hot put in the put in the cubed roast and onions cooking until the meat is browned and the onions are caramelized. Then add the remaining ingredients. Stir together well the put the lid on cook for about 1 hour stirring occasionally. Be careful so you don’t overcook. Just cook until the potatoes are done.
Sit back and Enjoy !
