How To make Christmas Cookie Slices
1 c Sugar
1 c Margarine or butter,
Softened 2 Eggs
1 1/2 ts Vanilla
3 c All-purpose flour
1 t Salt
1/2 ts Baking soda
Mix sugar, margarine, eggs, & vanilla. Stir in remaining ingredients. Divide into 3 equal parts. Shape each part into a roll, about 1 1/2 inches in diameter. Wrap & refrigerate at least 4 hrs. Heat oven to 400 degrees. Cut rolls into 1/8 inch slices. Place about 1 inch apart on ungreased cookie shoot. /bake 8 to 10 min. Immediately remove from cookie sheet. ~-

I feel like this takes my usual shape series sets to a new level ⭕️ Using just circles cuts down on the cost of a cookie cutter (you can just use a water glass or anything circular you have in the house that’s about 3 inches in diameter), and as the artist I enjoy the enabling constraint of only have a circle to work with. Most of these designs are very commonly found, and it was so fun to put 10 of my favorites together! Also it took me way too long to settle on how to do that peppermint ????

With 2 simple doughs, this slice and bake cookie recipe makes 3 different flavors. It's the perfect easy Christmas cookie recipe! CHECK IT OUT:
Christmas Cookie Slices
These taste a little like Christmas cake in a cookie. These are only for people that like the taste of candied fruit. The cookies are a little on the dry side, but would be perfect if paired with milk or coffee.
1 cup butter softened
1 cup powdered sugar
1 egg
1 tsp vanilla
2 1/4 cups all purpose flour
2 cups candied fruits and peels (You can used just candied red and green cherries if you like)
1 cup nuts (optional) I used sliced almonds because that's what I had on hand. the original recipe calls for pecan halves.
Cream butter, sugar, egg and vanilla together. Blend in flour. Stir in fruit and nuts.
Chill dough for 30 minutes to an hour. Divide dough into three portions. Roll each portion into a log shape. The diameter of the log will be the size of your cookie.
Wrap rolled logs in waxed paper or plastic wrap and chill until very firm.
Slice logs into 1/4 inch slices and place on ungreased baking sheet. I use parchment paper on mine.
Bake at 325F for 10-12 minutes until edges are just turning brown.

Cherry Pie Sugar Cookie Cups | Easy Christmas Cookie Recipe
Cherry Pie Sugar Cookie Cups are easy and beautiful cookies to make for Christmas this year!
Cherry Pie Sugar Cookie Cups
(original recipe from lemontreedwelling.com)
1-16 oz. tube refrigerated sugar cookie dough
1/2 c. granulated white sugar
1-21 oz. can cherry pie filling
1 c. powdered sugar
1 Tbsp. unsalted butter, melted
1-2 Tbsp. milk
Preheat oven to 350*. Cut the cookie dough into 24 even slices. Pour 1/2 c. granulated sugar onto a plate or shallow bowl. Roll each slice of cookie dough into a ball. Roll each ball into the sugar to coat evenly. Spray a 24 cup mini muffin tin with baking spray then place one dough ball into each cup. Bake at 350* for 15 minutes. Remove from the oven and press the inside of each cookie cup down (if necessary) to create a well. Spoon about 1 Tbsp. of cherry pie filling into each cookie cup. Bake for 3-4 minutes. In a small bowl, whisk together the powdered sugar, melted butter and milk until it is smooth and pourable. Drizzle the glaze over the cookie cups. Cool completely before eating. Store in the refrigerator. ENJOY!
