How To make Chocolate Snappers
1 3/4 cups unsifted flour
2 teaspoons baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
3/4 cup vegetable shortening
1 cup granulated sugar
1 egg
1/4 cup corn syrup
2 ounces unsweetened chocolate -- melted
granulated sugar
Preheat oven to 350 F. In small bowl, mix flour, soda, cinnamon and salt. Set aside. In large bowl, mix shortening, 1 c sugar and egg, beat until creamy. Mix in corn syrup and chocolate. Blend in flour mixture. Shape into balls, using 1 tablespoon dough for each cookie. Roll in granulated sugar. Place on ungreased cookie sheets. Bake for 15 minutes. Makes 3 dozen 3 inch cookies. Variations: Chocolate Mint Snappers - mix in 1/4 teaspoon peppermint flavoring with corn syrup and chocolate. Giant Chocolate Snappers: Follow the above recipe. Shape into balls, using 1/4 cup dough per cookie. Bate 18-20 minutes. Makes 12 4-4 1/2 inch cookies.

Whole Baked Snapper Recipe
Snapper Baked with Cumin and Lemon. May be eaten hot or cold. A recipe from Ron Radford, food lover, bon vivant and Director of the Art Gallery of South Australia.
Ingredients:
1 whole snapper, approx. 2kg
1 tbsp chopped parsley
4 tsp ground cumin,
(preferably freshly ground)
6 tsp paprika
2 garlic cloves, chopped
1 tsp freshly ground black pepper
1 tsp salt
1/3 cup olive oil
1 lemon, cut into slices
Serves 4 to 6
Method:
Have the fish cleaned and scaled.
Mix together other ingredients, except lemon, and smear on the fish, inside and out.
Have a piece of alfoil to wrap the fish.
Lay half the lemon slices in the alfoil, place the fish on the lemon, put the remaining slices on the top.
Fold the alfoil loosely over the fish, and close it, top and sides, making sure the fish is completely enclosed.
Lay the parcel on a baking tray and bake in a moderate oven -- 190c, for about 30 minutes.
Turn off the heat and allow the fish to rest for 10 minutes before serving.
Remove the fish carefully from the alfoil and arrange on a large platter, surrounded by its juice.

Oven Grilled RED SNAPPER - under 20 minutes

INGREDIENTS:
* whole red snapper cleaned
* Sprinkle fish with old bay seasoning to taste
* 4 cloves garlic minced
* 6 Thai chilis chopped. Adjust amount to your preference
* 3 tbsp Ghee AKA clarified butter
* 1 large onion cut into thick slices
* Salt to taste.
Grill fish in oven using “broil” function for 5 minutes on each side. if fish is small. Increase time to 3 additional minutes both sides, if fish is heavier in weight.
