How To make Chocolate Lover's Cheesecake Microwave
3 tbsp Margarine
1 c Fine crush chocolate wafers
8 oz Cream cheese
softened
1/2 c Sour cream
1/3 c Sugar
1/4 c Milk
1 Egg :
beaten
2 oz Semisweet chocolate; melted
Cooled 1/2 tsp Vanilla
1 oz Semisweet chocolate opt.
1 tsp Shortening :
opt.
For Crust: Place margarine in the microwave pan. Cook, uncovered, on HIGH for 45-60 seconds or until melted. Stir in crushed chocolate wafers until all is moistened. Press mixture firmly against bottom and sides of pan. Cook, uncovered, on HIGH for 1- 1 1/2 minutes or until set, rotating pan a half-turn after 30 seconds.
For Filling: In medium mixing bowl combine cream cheese, sour cream, sugar, milk, and egg; beat with an electric mixer on medium speed just until smooth. Stir in 2 oz. melted chocolate and vanilla. Pour cream cheese mixture into crust. Cook, uncovered, on MEDIUM for 11-14 minutes or until a knife inserted 2 inches from edge comes out clean, giving dish a quarter-turn every 3 minutes. (Center will be slightly set, but not firm.) Cool slightly, then
refrigerate at least 4 hours or until set.
For Topping: (optional) In a 1 3/4 quart casserole cook remaining 1 oz. chocolate and shortening, uncovered, on HIGH for 2-3 minutes or until melted; stir until smooth. Drizzle chocolate mixture on top of cheesecake.
Per serving: 405 cal, 30 g fat, 86 mg chol

INGREDIENTS:
Chocolate Fudge Cake
1 3/4 cups flour
2 cups sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla
1 cup boiling water
Chocolate Ganache (recipe follows)
Chocolate sprinkles (optional) OR chopped toasted almonds OR pecans
INSTRUCTIONS:
1. In a large mixer bowl, mix together flour, sugar, cocoa, baking soda, baking powder and salt.
2. With an electric mixer on medium speed, beat in eggs, milk, oil and vanilla; beat 2 minutes on medium speed. On lowest speed (to avoid spattering), beat in boiling water (batter will be thin) until well blended.
3. Pour into 2 greased 9-inch round layer cake pans, dividing evenly.
4. Bake in preheated 350-degree oven about 30 to 33 minutes or until cakes test done. Cool in pans 15 to 20 minutes, then remove to racks to cool completely.
5. When cool, with a long-serrated knife, cut each layer in half horizontally. Spread a layer of Chocolate Ganache over bottom layer and over tops of 2 more cake layers and stack together on a large serving plate. Place remaining cake layer on top of cake stack. Frost top and sides of cake with Chocolate Ganache. Press chocolate sprinkles or nuts into ganache around sides of cake, if desired. Refrigerate cake until serving time. Makes 1 (9-inch) cake.
Chocolate Ganache
4 cups semisweet chocolate chips (2 (12-ounce) packages)
2 cups whipping cream
3 tablespoons butter, cut up
2 teaspoons vanilla
INSTRUCTIONS:
1. In a large microwave safe bowl or measure, combine chocolate chips and whipping cream.
2. Heat on high (100 percent) power in microwave oven 1 1/2 to 2 1/2 minutes. Remove from microwave, stirring until chocolate is melted and mixture is well blended. Add butter and vanilla stirring until butter is melted and mixture is well blended.
3. Cool in refrigerator, stirring occasionally, until of good spreading consistency to spread over cake layers. Use to fill and frost top and sides of a 4-layer 9-inch cake.

NO BAKE CHOCOLATE CHEESECAKE RECIPE
Ingredients
25 Oreo Cookies
½ Stick | ¼ Cup | 55g Butter
9oz | 250g Dark Chocolate
1⅔ Cup | 400ml Heavy Cream
9oz | 250g Cream Cheese
½ Cup Powdered Sugar | Icing Sugar
1 Cup | 250ml Cream
9oz | 250g Dark Chocolate
Instructions
Place the Oreo cookies into a food processor and run the machine until there is only crumbs.
Melt the butter in the microwave for about 30 seconds or in a saucepan.
Pour the cookie crumbs and melted butter into a medium sized mixing bowl and mix together with a wooden spoon until well combined.
Pour the mixture into an 8inch or 20cm lined cake tin and press down with the back of a spoon until firmly packed and even.
Place the cheesecake base into the fridge to set.
Cut the chocolate into small pieces with a serrated knife and place into a heat proof bowl.
Melt the chocolate over a saucepan of simmering water, stirring occasionally until completely smooth and leave to cool.
Pour the heavy cream into a medium sized mixing bowl and beat with a whisk until softly whipped, set to the side.
In a large mixing bowl combine the cream cheese and sugar and beat with a whisk until well combined.
Pour the softly whipped cream and cooled melted chocolate into the bowl with the cream cheese and sugar.
Mix the ingredients together with a whisk for a few minutes until well incorporated.
Pour the cheesecake filling into the cake tin and use an offset spatula to smooth out the top.
Bang the cake tin on the counter a few times to remove any air bubbles and place into the fridge to firm.
To make the topping for the chocolate cheesecake cut the second lot of chocolate into small pieces and place in a heat proof bowl.
Pour the cream into a small saucepan and heat over medium heat until it just starts to boil.
Remove the cream from the heat and pour over the chocolate and leave to stand for about 5 minutes.
Mix the chocolate and cream together until completely smooth and pour over the cheesecake.
Refrigerate or freeze the cheesecake for at least 4-6 hours or overnight before slicing and serving.

This is the ultimate chocolate cheesecake recipe for chocolate lovers just like me????
Chocolate Cheesecake
Ingredients
For the crunch
24 chocolate sandwich cookies
60 gr butter
For the cheesecake
1/4 cup heavy whipping cream
1 cup semi-sweet chocolate chips
8 oz cream cheese
1/2 cup sour cream
1/2 cup mascarpone
1 cup granulated sugar
3 eggs
2 tbsp cocoa powder
Orange zest or extract
Vanilla
For the ganache
1 cup chocolate chips
3/4 cup heavy whipping cream
Instructions
Preheat the oven to 340F.
In a food processor, add the sandwich cookies and melted butter and process until well blended.
Wrap a 7 springform pan with two layers of heavy-duty aluminum foil. Make sure to cover the underside of the pan and around the sides of the pan.
Then transfer the mixture to the springform pan and press the crumbs into the pan.
Bake for about 8 min. Remove from the oven and set aside.
Preparing the cheesecake
In a small bowl, add chocolate and heavy cream and microwave for a few seconds until melted and stir.
In a large bowl, add room temperature cream cheese, sour cream, mascarpone, sugar, and whisk.
Add eggs one at a time and mix well. Add cocoa powder, vanilla, and orange zest and stir.
Pour the melted chocolate and mix until combined well.
Pour the mixture into the springform pan.
Bake for about 60-70 min in a water bath (bain-marie), and chill at least 4-5 hours or better overnight.
The next day, transfer the cheesecake to a serving plate.
In a small bowl, add the chocolate and heavy cream and microwave for a few seconds until melted and stir.
Pour the ganache over the chilled cheesecake. Serve with raspberry.
