How To make Chocolate Filled Fruit Oatmeal Bars
1 cup margarine -- softened
2 cups brown sugar, packed
2 eggs
2 teaspoons vanilla extract
3 cups quick-cooking oats
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
Chocolate Filling 1 tablespoon margarine
1/2 cup semisweet chocolate chips
14 ounces sweetened condensed milk
2 teaspoons vanilla extract
1/2 cup coconut flakes
1/2 cup raisins
In large mixing bowl beat together softened margarine and brown sugar until creamy. Add eggs one at a time then vanilla and stir in. Mix together oats, flour, baking soda and salt. Gradually add oatmeal mixture to margarine mixture, beating in to well-blended. Spoon 2 cups of the dough and set aside. Grease 15 1/2" X 10 1/2" jelly roll pan. Press remaining dough into of bottom of the pan.
Filling: In microwave, melt margarine. Add semisweet chocolate chips, cook on medium until chocolate starts to melts, stirring frequently until chips are melted. Stir in sweetened condensed milk and vanilla until uniform in color. Stir in raisins and coconut flakes. Spread the filling over the crust in the jelly roll pan. Scatter small pieces of the remaining dough over filling. Bake 25 minute or until top is golden brown at 350F. Cool completely on wire rack. Cut into bars. Makes 30 pieces. Per serving 255.5 calories, 9.7 grams fat, 33.5% from fat.

Ingredients
Makes about 9 servings
Crust
3/4 cup (95) all-purpose flour
1 cup (100g) rolled oats
1/2 cup (100g) light brown sugar
1/2 tsp (2g) baking powder
1/4 tsp (1g) salt
1/2 cup (113g) unsalted butter, room temperature
1 tsp (5g) vanilla extract
Strawberry Filling
10 oz (300g) fresh strawberries
2 tbsp (30g) sugar
1 tbsp (8g) cornstarch
Zest from a lemon
1. Preheat oven to 350F (180C). Slightly grease a 8x8 inch (20x20cm) square pan and line with parchment paper, in such a way that some edges are longer to make it easy to lift it up once it's set.
2. In a bowl, combine flour, oats, brown sugar, baking powder and salt. Add butter and vanilla and stir until combined and crumbly. Set aside about 1 cup.
3. Press remaining crumb mixture into the bottom of the pan.
4. Cut strawberries in small pieces and place into a bowl. Add sugar, lemon zest and cornstarch and toss to coat. Spread the strawberries over the crust.
5. Sprinkle the reserved cup of crumb mixture over the strawberries.
6. Bake for 30-40 minutes or until lightly browned. Cool completely.

easy one-bowl baked oatmeal bars ????
Ingredients:
- 3 ripe bananas (mashed)
- 1/2 cup peanut butter or nut butter of choice
- 2 cups rolled oats
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
Add all ingredients to baking dish (I used my @lecreuset baking dish) and mix. Bake at 350F for 18-28 minutes or until you start seeing the bars turn golden brown. Enjoy!!
