How To make Fruit Filled Spritz
1 c Butter
1/2 ts Almond extract
1 c Sugar
4 c Sifted flour
1/2 c Brown sugar; packed
1/2 ts Soda
3 Eggs
1/2 ts Salt
1/2 ts Vanilla
Fruit-nut-filling: 1/2 c Water
1/2 c Candied cherries; finely cho
1/2 c Sugar
1 1/2 c Cut dates
1/2 c Chopped nuts
1 ts Orange rind
Cream butter; add sugars gradually. Beat in eggs and extracts. Blend in sifted dry ingredients; chill. Make FruitNut Filling: Combine water, sugar, dates and orange rind. cook until thickened; stir; add cherries and nuts; cool. Knead dough in hands until soft and pliable. Press dough through cookie press onto ungreased cookie sheets. (Use the saw-toothed shaped cookie press plate.) StrIPS OF DOUGH SHOULD BE 10" LONG AND 2" APART. Spread filling down center of each strip. Use cookie press to cover filling with another strip of dough. Bake at 375 degrees about 12 minutes. Cut into 1-1/4" bars immediately. Makes about 8 dozen. This Pomegranate Aperol Spritz is the perfect cocktail for the holidays, and super easy to make a batch for guests!
INGREDIENTS
3 fl. oz. Aperol
1 1⁄2 fl. oz. Pomegranate juice
4 fl. oz. Prosecco
1 splash sparkling water
1 small orange or clementine wedge
1/2 cups Ice
HOW TO
1. Fill a glass with ice. Pour Aperol and pomegranate juice over the ice. Stir.
2. Pour prosecco and top with a splash of sparkling water. Garnish with an orange or clementine slice.
*To make a batch cocktail, mix Aperol and pomegranate juice based on the number of people coming in a large pitcher. Right before guests arrive add the Prosecco and sparkling water. Have ice and orange wedges nearby for guests to pour themselves a drink. ????

INGREDIENTS:
One handful of your favorite berries
2 sprigs of fresh mint
1 lime, rolled and sliced
1 tsp Happy Fiber
8 oz chilled sparkling water (such as San Pellegrino)
1/4 cup crushed ice
Optional: powdered monk fruit - add about 1/4 teaspoon or to taste until it's perfectly sweet
DIRECTIONS:
• In a glass, muddle together berries, lime & mint - if you don't have a muddler, a wooden spoon works just fine.
• Fill glass with ice.
• Pour chilled sparkling water over muddled fruit & ice.
• Add 1 tsp of Happy Fiber. Stir well.
• Add monk fruit for an extra touch of sweetness, if desired.
• Garnish with extra berries, mint, and lime.

HOW TO MAKE A STRAWBERRY APEROL SPRITZ
A strawberry spin on the classic Aperol Spritz cocktail, which makes use of a strawberry gin from Tasmania. The Southern Wild Distillery made this as a limited edition using strawberries from regions affected by a fruit fly outbreak, which meant the fruit would have otherwise been thrown away notwithstanding that they were still edible. It does have some sugar added to give it a bit of sweetness, though not so much that it is a liqueur.
This version also makes use of a lightly spritzed rosé wine, which has some effervescence but brings a drier finish to the cocktail than prosecco.
INGREDIENTS
+60ml Dasher & Fisher strawberry gin
+30ml Aperol
+Soda water
+Squealing Pig Spritzed Rosé
INSTRUCTIONS
1. Mix gin and Aperol in a shaker and stir over ice to combine it.
2. Strain the gin & Aperol into a glass filled with ice
3. Top up with a splash of soda and about 60ml of the rosé
4. Garnish with strawberries and serve

1 small peach, cored and sliced or diced
1/2 orange sliced
1/2 orange juiced
1 cup cherries sliced in half and seeds removed
Aperol
Presecco
-Add fruit and orange juice to a coffee press.
-Fill 1/2 way with prosecco and 1/2 with Aperol.
-Stir, cover and refrigerate for at least 2 hours.
-Press, pour over ice and serve with an orange slice (optional)
