How To make Chocolate Almond Cake
1/2 c Cocoa
1 1/2 ts Baking soda
1/2 c Boiling water
1/4 ts Salt
2/3 c Shortening
1 1/2 c Buttermilk
1 3/4 c Sugar
1 ts Vanilla extract
2 Eggs
Almond cream filling: 1/4 c All-purpose flour
1 ts Almond extract
1/2 c Milk
1/4 ts Salt
1/4 c Softened butter
4 c Sifted powdered sugar
1/2 c Shortening
2 1/4 c All-purpose flour
2 tb Sliced almonds; toasted
Chocolate frosting: 1/2 c Butter; softened
1 ts Vanilla extract
3 Unsweetened chocolate;
-melted 1 pk Sifted powder sugar; 16 oz
1/3 c Milk
Combine cocoa and boiling water in a bowl; stir until smooth. Set aside. Beat shortening. Gradulaly add sugar, beating well. Add eggs, one at a time; beat well after each addition. Combine flour, soda, and salt; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Mix just until blended after each addition. Stir in chocolate mixture and vanilla. Pour batter into 3 greased and floured cakepans; bake at 350 for 20 to 25 min. or until a wooden pick inserted in center
comes out clean. Cool in pans 10 minutes; remove from pans, and let cool completely on wire racks. Spread Almond Cream Filling between layers. Reserve 1 c. Chocolate Frosting; spread remaining frosting on top and sides of cake. Pipe or dollop reserved frosting on top of Filling: Combine flour and milk in a small saucepan; cook over low heat, stirring constantly with a wire whisk, until mixture thickens and just begins to boil. Remove from heat; cool. Cover and chill at least 1 hr. Beat butter and shortening at medium speed of an electric mixer. Add chilled flour mixture, almond extract, and salt; beat until smooth. Gradually add powdered sugar; beat at high speed 4 Frosting: Beat butter and chocolate at low speed of an electric mixer until smooth. Blend in milk and vanilla extract. 6 eggs large, room temperature, separated
¾ cup sugar divided
⅛ teaspoon salt
1 teaspoon lemon juice
7 ounces semisweet chocolate best quality, chopped
6 ounces unsalted butter room temperature, plus more for pan
⅛ teaspoon almond extract
2 cups almond flour 7 ounces
½ teaspoon baking soda
4 tablespoons seedless raspberry jam optional
1 tablespoon water
GANACHE ICING
¾ cup heavy cream
8 ounces semisweet chocolate best quality, finely chopped
1 teaspoon instant coffee powder
1 tablespoon honey
OPTIONAL
Cocoa powder for dusting cake pan
Chopped Almonds decoration
Fresh Raspberries decoration
Extra Baking Chocolate (White and Dark) for chocolate curls

1:07 Whip the egg whites with sugar until stiff peaks form. I love my KitchenAid stand mixer for this.
2:00 Melt chocolate with butter.
2:30 Whip egg yolks until thick, pale and stable. Stir in the melted chocolate-butter mixture.
3:06 Add almond flour in 3 batches, adding just enough whipped egg whites to soften batter.
3:50 Carefully fold in remaining egg whites into the batter.
4:50 Transfer batter to springform pan and bake.
5:25 Make jam syrup and chocolate ganache.
6:23 Level off the cake on the top using a sharp long knife. Invert it and place on a cake plate. A nice cake lifter comes in handy for this.
7:19 Spread jam syrup and followed by ganache icing. An offset spatula is useful for this.

Chocolate Almond Cake
Ingredients:
buttermilk:
warm milk 75 ml
white vinegar or lemon juice 1 tbsp
Hot water 200 ml
coffee powder 2 tsp
cocoa powder 60 grams ( 2/3 cup)
sugar 175 grams ( 3/4 cup)
buttermilk
oil 60 ml or grams
vanilla 2 tsp
Dry:
all purpose flour 160 grams ( 1 1/4 cup)
baking powder 1/2 tsp (2 grams)
baking soda 1 tsp ( 5 grams)
salt 1/8 tsp
Chocolate ganache :
chocolate bar or chips 340 grams (dark)
whipping cream 340 grams (35%fat)
butter 30 grams ( 2 tbsp)
Chocolate syrup:
water 1/4 cup
sugar 1/4 cup
cocoa powder 1 tbsp
Combine water and sugar bring it to a boil and add the cocoa powder.
Mix it until it's smooth.
let it cool before using it.
Baking time: 35 to 40 minutes ( Depending on your oven temperature.
Oven temperature: 170°c
Baking pan size: 2 6 inches round pan.
Note: You may double or triple the recipe for big batches.
