How To make Chinese Style Beef
1 1/4 lb Boneless top sirloin,
-trimmed of fat 1/2 ts Ground ginger
1 ts Sugar
3 tb Soy sauce
2 ts Cornstarch
1 tb Vegetable oil
1 c Water
3/4 c Quick-cooking long-grain
-rice 1 lb Fresh broccoli, trimmed, cut
-into 1-inch pieces With a sharp knife, cut the steak diagonally across the grain into thin slices. In a medium bowl, mix together the ginger, sugar, soy sauce, and cornstarch. Add the meat strips and toss to mix well. Let stand for 5 to 10 minutes. In a 10-inch skillet, heat the oil over high heat until hot. Add the meat mixture. Cook, stirring, over high heat, until the meat loses its redness, 5 to 5 minutes. Remove to a plate. Add the water, rice, and broccoli to the skillet and heat to boiling. reduce the heat to medium-low, cover, and simmer for 5 to 6 minutes, or until the broccoli is tender. Return the meat to the skillet and heat to boiling, stirring often. Reduce the heat and simmer, stirring, for 1 minute.

The spicy dry-fried beef is a perfect example of the dry-frying technique unique to Sichuan cuisine. The shredded beef is un-marinated, quickly stir fried in a wok to drive off the moisture and intensify the beef flavor. The shredded beef will be stir fried twice with aromatic spices to absorb more flavor. The end result is spicy and aromatic beef with crispy and chewy bites.
The key to this dish is to control the temperature when dry frying the beef, otherwise the shredded beef can be easily overcooked.

It’s not just the cut of meat that determines how tender it is, it’s also how you cut the meat. First, find the direction of the grain (which way the muscle fibers are aligned), then slice across the grain rather than parallel with it. By cutting against the grain, we want to cut through the fibers and shorten them, rather than cut in the same direction that they run.

Beef Stir Fry With Broccoli & Oyster Sauce (Chinese Style Cooking Recipe)
Welcome to Xiao's Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
200g Beef Fillet
150g Broccoli
3 Cloves Garlic
5g Ginger
1 Small Onion
2 Tbsp Oyster Sauce
1 Tsp Light Soy Sauce
½ Tsp Coarse Black Pepper
1 Tsp Sugar
3 Tsp Cornflour
1 Tbsp Rice Wine
Method:
1. Finely chop the garlic and ginger
2. Cut onion into bite-size pieces
3. Cut broccoli into bite-size pieces
4. Cut beef into thin slices and place in a bowl, add rice wine and 2 Tsp of cornflour, mix well and leave to marinate for 10 minutes
5. Combine the remaining cornflour and 50ml of water in a bowl
6. Heat 1 Tbsp of oil in a wok over high heat
7. Place beef in the wok, stir-fry for 2 minutes and then remove from wok
8. Heat another Tbsp of oil in the same wok
9. Place onion and broccoli in the wok and stir-fry for 30 seconds
10. Add oyster sauce, soy sauce, sugar, garlic, ginger and black pepper, stir-fry for a minute
11. Add 50ml of water and bring to the boil
12. Stir and pour the cornflour mixture into the wok, bring to the boil
13. Add beef, stir-fry for a minute - ensure beef is evenly coated with the sauce
14. Transfer to a dish and serve
