The sauce is easy and simple too, with sesame oil, brown sugar, mirin, soy sauce, hoisin sauce, cornstarch and chicken broth.
????INGREDIENTS????:
Stir Fry:
3 tablespoons vegetable oil (divided use)
1 cup zucchini (quartered lengthwise and sliced)
1 small onion (diced)
1 green bell pepper (diced)
1 cup mushrooms (sliced)
4 cloves garlic (minced)
2 pounds boneless skinless chicken thighs (cut into 1 inch pieces)
1/2 cup blanched almonds (sliced or slivered)
1 teaspoon ginger (minced)
salt and pepper to taste
1/2 cup chopped green onions
Sauce:
1/2 cup chicken broth
1/4 cup water
3 tablespoons soy sauce
1 tablespoon mirin
2 tablespoons hoisin sauce
2 tablespoons brown sugar
2 teaspoons sesame oil
1 tablespoon corn starch

Canadian Chinese Take Out - Almond Chicken Soo Guy
Almond Chicken Soo Guy is a dish unique to Canadian Chinese Take Out. It is essentially battered chicken fillets covered in a savory sauce and almond pieces. This is a great dish to have with rice.
Batter Recipe:
- 1 cup white flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup water (may need a little more as needed)
tips:
- When making the sauce, I use 1tbsp to 1 heaping tbsp cornstarch mixed into 1/4 cup water to make the cornstarch slurry. This is enough cornstarch for about one cup of liquid. Make sure the cornstarch is dissolved in the water before adding to the wok. I add this slurry at the very end of the cooking process. Mix the sauce after adding the slurry and let come to a boil. Once the sauce comes to a boil, turn the heat off. It is done. If after adding the slurry, you find the sauce is still too thin for your liking, make some more cornstarch slurry and add to sauce again. Bring to boil again. If you find after adding the slurry, that the sauce is too thick, add some water to thin it out and bring to a boil again. If before you add the slurry, you find there is not enough liquid in the wok, add some more water before adding the slurry.
