1-2 rotisserie chicken
1/2 white onion chopped
Corn tortillas
Oil
Queso Oaxaca
Salsa:
15-20 small tomatillos
2 chile poblanos
2 chile Anaheim
Chile serrano I used 4
1/2 white onion
4 garlic cloves
8 oz hatch green chile
1/2 bunch cilantro
1/2 tsp cumin
1 tsp oregano
chicken bouillon
Salt and black pepper

These CHEESE ENCHILADAS are neither genuine Mexican nor totally Texan, they are TexMex style, these corn tortillas are stuffed with cheese and smothered in a delicious homemade sauce made with the best seasonings, then topped with a fresh Pico de Gallo and sides with refried beans and Mexican rice, it is a very easy and quick meal to prepare.
INGREDIENTS
2 Tbls melted butter
1 Tbsp vegetable oil
3 Tbsp All purpose flour
1 & 1/2 Tbsp chili powder (I like Gebhardt)
2 tsp Paprika
1 tsp onion powder
2 tsp garlic powder
1 tsp ground cumin
1/2 tsp oregano
3 C. chicken broth
2 tsp tomato paste
1 & 1/2 tsp chicken bouillon
1/2 tsp sugar
Salt if needed
Corn tortillas
American cheese (grated as needed) I used about 3/4 lb. but you use as needed for you.
chopped Onions for filling (optional)
FOR TORTILLAS
1/2 C. vegetable oil
8 Corn tortillas
SIDES
mexican rice
refried beans
Pico de gallo
PICO DE GALLO
1 C. chopped onions
1C. diced tomatoes
1 C. chopped cilantro
1 seeded and chopped jalapeno
juice of 1/2 lime

The Best Homemade Mexican Enchilada Sauce
4-6 dried Mexican Chilies
2 cups hot chicken broth
1 - 28oz can diced or crushed tomatoes
4-5 large roasted red bell peppers
5-6 cloves garlic
Snip ends of chilies and deseed. You may have to
open up the peppers. Cover the chilies with hot
chicken broth (or veggie broth or water) and let
set for 30 minutes until tender.
Place chilies and juice in blender or food
processor. Add tomatoes, roasted bell peppers
and garlic. Blend until pureed.
3 tbsp olive oil
3 tbsp flour
In a saucepan on medium heat add olive oil and
flour. Cook for 2-3 minutes constantly stirring.
Add in pureed chili mixture and stir well.
3 tbsp chili powder
1 tsp cumin
1 tsp thyme
1 tsp chipotle powder
1 tsp sugar
1 tbsp oregano
salt and pepper to taste
Add above spices to sauce and stir well.
Bring up to heat and let simmer for 30
minutes or until reduced.
Stores well..
Enjoy..

Red Chile Beef Enchiladas
1lb ground beef (subsitute with ground turkey, chicken, or veggies)
9-10 corn tortillas
2 tablespoons flour
3 tablespoons red chile powder
2 cups cold water
1 garlic clove minced, or crushed
1-teaspoon salt
2 ½ - 3 cups sharp cheddar cheese, shredded
In a medium size pan, brown ground beef, add flour and cook for one minute. Add red chile powder and cook for another minute. Now add water, garlic and bring to a boil. Once it is boiling, add salt and turn the heat down to low simmering for 20 minutes. Turn off chile and remove from heat -- you don’t need to cook it any longer. Now it is time to assemble your enchiladas!
Preheat oven to 350.Now in an 8x10 baking pan, spoon a ladle full of chile on the bottom of the pan. Layer corn tortillas to cover the bottom, then add more chile mix, covering all of the tortillas. Lastly, layer with cheese. Repeat the process until the entire chile mix has been used up. Cover with foil and bake for 40 minutes. The last 10 minutes of baking, remove the foil and continue to bake uncovered. Take the enchiladas out of the oven and let set for 15 minutes before serving.
To prep corn tortillas: Heat corn tortillas, 3 at a time, in a wet cloth for 30 seconds in the microwave. You do not need to fry in oil.
Serve enchiladas with fried papitas, beans, or calabacitas. (
