Grilled Cheese & Roasted Tomato Soup
Good soup ????
Fix those late night cravings with some bomb as grilled cheese and spicy tomato soup ???????? here’s my recipe:
6 tomatoes, quartered
1 onion, quartered
1 capsium/ bell pepper, chopped
1 whole garlic bulb
Chilli flakes (optional)
1/2-1 cup unsalted vegetable stock
1/2-1 cup cream
3-4 basil leaves
Salt and pepper
2 slices of your favourite bread
Mozzarella cheese
Cheddar cheese
Butter
Method:
1. Chop off the top of your garlic bulb, leaving the cloves exposed. With your garlic, place all your other chopped vegetables into a large baking dish, drizzle generously with olive oil, chilli flakes, salt and pepper and bake at 200C for 50-60 mins until the vegetables are slightly charred and soft.
2. [optional] Use a blow torch and lightly torch your roasted vegetable to add extra char if you like your soup smokey. Careful not to burn it.
3. Transfer your vegetables into a pot or a blender with your stock, cream and basil. With a stick blender or a normal blender, blend your soup until smooth. Salt and pepper to taste.
4. For your grilled cheese, cut up 2 slices of bread. You can use any cheese you want or have on hand. I used mozzarella for the stretch and cheddar for the bitey taste. Butter your bread and grate as much cheese as your heart can take. Grill in a pan over medium heat until golden brown and cheese melted. Serve with tomato soup.

To Make Vegetable Cheese Toasties
Bread Slices
Unsalted Butter - 100 Gms
Garlic - 6 Cloves
Mozzarella Cheese - 200 Gms
Sweet Corn - 1 Cup
Red Capsicum - 1 Cup
Green Capsicum - 1 Cup
Onion - 1 No.
Green Chilli - 2 Nos
Salt - 1/2 Tsp
Pepper - 1 Tsp
Italian Seasoning - 1 Tsp
Red Chilli Flakes - 1 1/2 Tsp
Coriander Leaves
Method:
1. For the garlic butter, take some butter in a bowl. Add the grated garlic, chilli flakes and salt. Mix it all well.
2. For the filling, take the cooked sweet corn, chopped red capsicum, green capsicum, onions, green chillies and finely chopped garlic in a large bowl.
3. Add in salt, pepper powder, Italian seasoning, red chilli flakes, grated mozarella cheese, chopped coriander leaves and mix it all well. Keep this mixture aside.
4. For making the sandwich, take two bread slices and apply the garlic butter on one side of them both.
5. Now put some filling on only one bread and spread it. Cover it with the other bread slice.
6. Apply butter to a pan and place the prepared sandwiches.
7. Cover the pan with a lid and toast the sandwiches on a medium low flame.
8. Once they are toasted well on one side, flip them to the other side and toast until they are crunchily golden.
9. Remove them from the pan and cut them into half as desired to serve with some tomato ketchup by the side.
Veg cheese toasties are full of amazing flavors from Mozarella cheese, Italian seasoning, chilli flakes and some veggies. These are very simple sandwiches which can be made within minutes. So they actually make a great snack in the evening for kids who come home waiting for some tasty food. Do try this recipe and enjoy!

Garlic flavoured toast loaded with grated cheese.
CHEESE GARLIC TOAST
Ingredients
4 bread slices
2 cups processed cheese, grated
1 cup cheddar cheese, grated
2 tablespoon garlic, finely chopped
2 tablespoon green capsicum, finely chopped
1 teaspoon red chilli flakes
2 teaspoon milk
Crushed black peppercorns to taste
2 tablespoons fresh coriander leaves, finely chopped
Butter as required
Method
1. Mix together processed cheese, cheddar cheese, garlic, green capsicum, red chilli flakes, milk, crushed black peppercorns and fresh coriander leaves in a bowl.
2. Apply the prepared mixture on 4 bread slices.
3. Heat 1 tablespoon butter in a non-stick pan, place the toast cover and cook till the cheese melts.
4. Apply some more butter on top of the toast, cut in triangles and serve warm with beetroot chips.
