How To make Chicken and Black Bean Quesadillas
1 pound skinless boneless chicken breasts
cooked
1 cup green bell peppers :
sliced
1 cup red onion sliced
1 teaspoon chili powder
1 teaspoon olive oil
8 flour tortillas
2 cups black beans, cooked
1 1/2 cups shredded lowfat cheddar cheese :
or Jack
salsa optional nonfat sour cream :
optional cilantro -- optional
Heat oven to 375F. Cut chicken into 1/2-inch slices. In a nonstick skillet over medium heat, saute peppers, onions and chili powder in hot oil until vegetables are slightly softened, about 3 minutes. Remove from heat. Place 4 tortillas on a large baking sheet. Evenly spread beans over tortillas. Top with pepper mixture, chicken and cheese. Top each with remaining tortillas and press down lightly. Bake until heated through and cheese is melted, about 15 minutes. Cut each quesadilla into quarters and serve with salsa, sour cream and cilantro. Per 1/2 quesadilla 341 calories, 9.1 g fat (24%) 56 mg cholesterol, 450 mg sodium, 4.2 g dietary fiber
Variation ^ Substitute chili beans for black ones, and use 1/2 cup each of green and red bell peppers instead of all green.

JALAPEÑO CHICKEN QUESADILLAS | THE GOLDEN BALANCE
Jalapeño Chicken Quesadillas ????
THESE ARE SO GOOD I PROMISE.
Spice mix:
1 tsp chili powder
1 tsp paprika
1 tsp salt
1 tsp sugar
1 tsp onion powder
1 tsp garlic powder
1 tsp cayenne pepper
1/2 tsp cumin
Apply seasoning accordingly. I didn’t use all of it (used about half)
2 lbs chicken things
4 large flour tortillas
4 cloves garlic
1/4 cup jalapeño pickle juice
Juice of 1 lemon
A couple hour marinate is worth it!
EASY GUAC:
2 avocados
1 Roma tomato
1 jalapeño
1/4 cup cilantro
1/2 red onion (diced)
2-3 cloves garlic
Juice of a lime
Salt to taste
Jalapeño sauce is to die for:
1/2 cup mayo
1/2 cup sour cream
1/4 cup diced jalapeños
1-2 Tbsp jalapeño juice ( just trust me)
Pinch of fajita seasoning you made earlier ;)
Spread the sauce all over the chicken. It sort of coats it and makes it so creamy and flavorful. Don’t be a wimp when you apply it.
1/2 cup mozzarella
1/2 cup sharp cheddar
Apply cheese with your heart, don’t be a b**ch
1 Tbsp of butter for each quesadilla. Use Kerry gold or local Amish butter if you can!
Medium heat for the toasting so you don’t burn the bread!

Black Bean Quesadillas - Quick and Easy Recipe!
It’s time you meet the easiest and quickest vegetarian quesadilla recipe. 15-minute black bean quesadillas. And it goes without saying, they are also super delicious. I mean, really delicious. These crispy quesadillas are filled with beans, sweet red pepper, corn, red onion, lime juice, salsa, spices and plenty of cheese.
The best thing about them is that there is no pre-cooking involved. The vegetables are simply mixed together with the rest of the filling ingredients and away you go! Top one half of your quesadillas with the filling, then some cheese, fold them over and give them a grill. It’s that easy!
Ingredients:
1 x 400 g can organic black beans, drained and rinsed
1 small sweet red bell or pointed pepper, diced
1/3 cup corn kernels (80 g)
1 small red onion, diced
1 tablespoon chili powder (see notes)
1/2 teaspoon ground cumin
sea salt and freshly ground pepper, to taste
Juice from half a lime
1/2 a small bunch cilantro leaves (handful)
3 tablespoons salsa
Heat resistant oil, for grilling
4 large wholegrain flour tortillas
200 g shredded Cheddar cheese
To serve (optional):
sour cream
salsa
fresh or pickled jalapeño pepper

BLACK BEAN QUESADILLAS | Easy Quesadilla Recipe
This Easy Black Bean Quesadilla recipe is definitely one of my favorites! Soft cooked vegetables on the inside and a crispy tortilla shell on the outside. Black Beans and corn are the star of the show. But you can definitely kick it up a notch by adding some sautéed bell peppers. Top it all off with your favorite toppings like sour cream, salsa and avocado!
Perfect for Meatless Mondays, Meal Prep and Vegetarian or Vegan meals.
