How To make Chicken and Bean Burritos
4 To 5 Chicken Breasts -- (or
-thighs or a mixt 1 sm Onion
chopped
1 To 2 Bay Leaves
1 t Cumin
1 t Chili Powder
1/8 ts Red Pepper
1/8 ts White Pepper
1/8 ts Black Pepper :
freshly
Ground Chicken Stock or broth 1 Red Onion :
chopped
1 To 2 Jalepenos, Seeded
-diced fine 1/4 To 1/2 Cup Chopped Cilantro
Grated Colby-Jack Cheese Fat Free Sour Cream 2 cn Pinto Beans -- drained and
Rinsed Salsa Lettuce Chopped Tomatoes Chopped Burrito-Sized Flour Tortillas
Place chicken, onion, bay leaves, spices in a pot and cover with chicken stock. Bring to a boil, cover, reduce heat and simmer until the chicken is done. Remove the chicken, let cool and shred. Strain the broth and save. Drain, rinse and drain the pinto beans. Place the pinto beans in a food processor and process until smooth, adding a couple of tablespoons of either salsa or chicken broth or sour cream if too thick. In a bowl, combine the chiken and beans, again adding salsa or the chicken stock until the filling mixture is moist enough to stick together. (If you get it too wet, add more processed beans. Add the chopped red onion, the jalepeno pepper, the chopped cilantro and mix. Take a large flour tortilla and spread with a little bit of the fat free sour cream and some grated cheese. Add a couple of tablespoons of the filling on one end and fold the sides over and then roll up. You can use a toothpick to keep it rolled up or place it end side down to keep it from unrolling. Either bake in a hot (450-degree) oven until brown and crunchy or microwave until hot. Serve toped with lettuce, tomatoes, red onion, fatfree sour cream, grated cheese, salsa and jalepenos. CHICKEN BURRITO
Ingredients
5 tortillas , flour (approx 20cm/8 wide)
CHICKEN FILLING:
1 lb chicken breast or chicken tenders
1 tbsp olive oil
1 tsp smoked paprika
2 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp salt
mix well
2-3 tbsp cooking well
Cook the chicken until done. Then Dice the chicken for filling.
REFRIED BEAN:
1 large onion , chopped
1/2 bell pepper , diced
16 oz refried beans , canned
1/4 cup water
MEXICAN RICE :
How to Make Spanish Rice:
OTHER STUFFINGS OR TOPPINGS:
Can corn , drained
1 cup cheese , shredded (Mexican blend, cheddar, tasty, Montery Jack)
1/4 cup coriander/cilantro , finely chopped
tomatoes
Salsa
wrap tightly in foil and bake!
Bake for 15/20 min on 400F

Easy Burrito Recipe - Fast and Easy Burritos
This Easy Burrito Recipe is super fast and is delicious. Plus learn how to fold a burrito! It only requires a few ingredients. To make this chicken and bean burrito recipe you need:
- 1 can of re-fried beans
- 1 can of black beans drained and rinsed
- 2 cups of shredded cheddar cheese
- 6 large flour tortillas
- Sriracha or other hot sauce (optional)
- 1 medium onion diced finely
- 2 large chicken breasts cook and diced up
Directions:
Heat up the re-fried beans and the black beans. Place about 1/6 of the bean mixture onto a tortilla, add a little onion to taste, some of the chicken (optional), some cheese, and some hot sauce if you like your burritos with a little heat. Fold up the burrito and enjoy. You can also fry the burrito for 3 minutes on each side over medium heat in some butter.
Serve with red sauce and sour cream. Enjoy your burritos!
