Tip!!! You can fry them if you want them to be more crispy! Also try them in the air fryer bake at 400 for 3-4 minutes
‼️‼️Don’t have an instant pot/ pressure cooker, no problem try it on the crockpot high for 2-3 hrs
Stovetop: boil your chicken for 25 minutes then shred and cook your chicken with taco mix, diced tomatoes and green chiles, then add cream cheese and cheeses cheese ????
Ingredients:makes 30 flautas
2 lbs or 3 chicken breast
Flour tortilla for soft tacos
16 oz Monterey Jack or Oaxaca cheese
6 oz cream cheese
2 oz (2 packages) taco seasoning mix
1 can (10 oz) ROTEL seasoned diced tomatoes&green chiles
3/4 chicken broth or water
Oil

Chicken Flautas with Avocado Cream

Ingredients
For the Flautas:
Vegetable or canola oil, for frying
1 tablespoon butter
1/2 small red onion, diced
1 jalapeno, diced
1 garlic clove, minced
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper 1 rotisserie chicken, skin removed and meat finely shredded
1 cup salsa
1/4 cup freshly chopped cilantro leaves
1 cup shredded Cheddar/Monterey jack blend
1 lime, juiced
Salt
16 (5 to 6-inch) flour tortillas
2 cups shredded iceberg lettuce, for serving
For the Avocado Cream:
1 very ripe avocado, halved, pitted and flesh removed
1 (4-ounce) container sour cream
2 tablespoons fresh lime juice

Directions
Special equipment: toothpicks
Fill a large pot with enough oil to reach 2 inches up the side of the pan. Heat over medium heat until a deep-frying thermometer inserted in the oil reads 375 degrees F. To make the flautas: In a pan over medium heat melt butter and saute onions and jalapenos until tender, about 5 minutes. Add garlic, cumin, and cayenne pepper and cook until fragrant, another 2 minutes. Add chicken and salsa; stir to combine. Remove from heat and stir in cilantro, cheese and lime juice. Let cool slightly.
Preheat oven to 200 degrees F.
Working with 4 tortillas at a time, spread a heaping spoonful along the middle of each tortilla. Roll tortilla tightly around the filling and secure with a toothpick. Using tongs, hold each flauta in hot oil until firm, then release to continue cooking. Cook until golden brown, about 2 minutes, then remove to a paper towel-lined plate and immediately season with salt. Keep flautas warm in the oven on a sheet tray while assembling and cooking the remaining tortillas.
To make the Avocado Cream: In a serving bowl, mash avocado, sour cream and lime juice until smooth. Season with salt, to taste.
To serve, arrange flautas on a platter of shredded lettuce and serve with Avocado Cream on the side.

Rolled Crispy Chicken Tacos/Flautas
Servings: 33 tacos
Cook chicken in Broth
2 lbs bone-in, chicken breast
1/2 white onion, medium
6 garlic cloves
2 tomato, roma (6 oz)
1 jalapeno
2 carrots
1 TBSP Salt, kosher
1 tsp black peppercorns
4 ea sprigs of mint
Small bunch thyme
10 cups water
10 oz tomatillos
Pickled red onions
1/2 red onion, thinly, large
3 habanero
1 jalapeños
1/4 cup lime juice
1 tsp sugar
To taste white pepper
1 tsp dry mexican oregano
1 tsp salt, kosher
1/4 cup white wine vinegar
1/2 cup water
Make the salsa
Cooked tomatillos, onion, tomato, jalapeno, garlic.
2 cups broth
2 raw garlic, cloves
1/2 bunch cilantro
Prepare the shredded chicken
1 tsp kosher, salt
To taste white pepper (1/2 tsp)
2 TBSP smooth olive oil to fry the sauce
Season sauce at the end with 1/2 tsp of kosher salt.
Toppings
Cabbage, shredded
Mexican-style cream
Avocado, diced
Cotija cheese, crumble
Tomato, sliced

CHICKEN ROLLED TACOS | Crispy Taquitos With Avocado Salsa | Chicken FLAUTAS
Today I am making easy chicken rolled tacos or flautas that are great as a meal or party food. You can use flour or corn tortillas and make them ahead of time. These also freeze well to be fried for later use. I am also making a creamy avocado salsa for dipping.

12 to 14 flour or corn tortillas

GREEN DIPPING SAUCE
1 large avocado
Juice of medium to large lime
1 roasted jalapeno
1 roasted clove of garlic
a small bunch of fresh cilantro
1/4 cup to 1/2 cup ranch dressing
1/4 cup water
salt to taste
