How To make Cheesy Enchilanda Casserole
1 lb extra lean ground beef
1 md Bell Pepper
chopped
3 cloves Garlic :
minced
16 oz Black Beans drained
16 oz Tomato Sauce
16 oz Stewed Tomatoes :
Mexican
: Style 1 c Picante Sauce med. hot
1 ts Ground Cumin
1/2 ts Garlic Salt
8 Corn Tortillas
1/2 c Red Onions :
chopped
1/2 c ripe olives
1 c nonfat cheddar cheese
: shredded 1/4 ts Onion Powder
1/4 ts Garlic Powder
: Lettuce :
shredded : fat-free sour cream : Fresh Tomato -- chopped Brown meat with pepper, onion and garlic; drain. Add beans, tomato sauce, stewed tomatoes, picante sauce, cumin, garlic salt, and garlic powder and onion powder. Simmer 15 minutes. Spoon small amount of meat mixture in 13x9 baking dish. Top with tortillas. Top with half the remaining meat mixture; sprinkle with cheese and olives. Repeat (except for cheese). Cover tightly with aluminum foil. Bake at 350" for 20 minutes. Remove foil and top with remaining cheese. Bake uncovered for 5 minutes. Top with lettuce, tomato, sour cream and additional picante sauce. Bake in the oven at 350 degrees F for 15-20 minutes or until the cheese has melted and the tops of the enchiladas are a light golden brown.

▪️ 2 cups shredded cooked chicken breast
▪️ 1/2 tsp cumin
▪️ 1/4 tsp cayenne
▪️ 1/2 tsp garlic powder
▪️ 1/2 tsp onion powder
▪️ 1/2 tsp oregano
▪️ 1/4 tsp salt
▪️ 1/4 tsp ground black pepper
▪️ 2 cups shredded Monterey Jack Cheese, divided
▪️ 8 medium-large flour tortilla shells (I like to use fajita size)
White Enchilada Sauce
▪️ 14.5 oz can chicken broth (low sodium, preferred)
▪️ 2 tbsp unsalted butter
▪️ 2 tbsp flour
▪️ 1/2 tsp salt
▪️ 1/4 tsp cumin
▪️ 3/4 cup room temperature sour cream (or plain non-fat Greek yogurt)
▪️ 4 oz can diced green chiles (mild or hot, depending on preference)
▪️ 1 cup shredded Monterey Jack cheese

12 oz cheddar cheese (or cheese of choice)
ENCHILADA RED SAUCE INGREDIENTS
1/4 cup cooking oil
4 Tbsp all purpose flour
2 Tbls chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
16 fl oz chicken broth
salt to taste
**Bake in a 9x13 baking dish
**Preheat oven to 375 degrees F
**Bake covered for 20 minutes and then uncovered for 10 to 15 minutes.

INGREDIENTS
1 lb ground beef (I used 97/3 lean to fat ratio)
1/4 cup diced onions
2 garlic cloves minced
1/2 tsp ground cumin
1/2 tsp salt
pepper to taste
14 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz cheddar cheese (or Colby jack cheese)
ENCHILADA RED SAUCE INGREDIENTS
1/4 cup oil
4 tbsp all purpose flour
2 Tbls chili powder
1/4 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1 Knorr brand chicken bouillon cube
2 cups (16 oz) water
**You can substitute the bouillon cube and water with
2 cups of chicken stock or broth
**If using chicken broth, be sure to adjust salt and seasoning to taste
**Bake in a 9x13 baking dish
**Preheat oven to 375 degrees F
**Bake covered for 20 minutes and then uncovered for 10 to 15 minutes.

How to make enchiladas - cheese enchilada recipe. This video will show you how to make enchiladas. These ones are cheese and are vegetarian. Although I use my homemade red enchilada sauce you can use store bought to make it faster. These are delicious and easy.

Red enchilada sauce
12 corn tortillas
Oil
4 cups shredded cheese - preferably 4 Mexican blend
Chopped scallions
Preheat oven to 350 degrees.
Heat a skillet with about 2 inches of oil. Heat oil well. When oil is hot, add tortillas, one by one for a few seconds to soften. Place the tortillas on a paper towel lined plate and drain excess oil.
Line the bottom of and oven proof 9x13 pan with enchilada sauce. Pour some enchilada sauce in a bowl.
Place the softened and drained tortillas, one by one, into the sauce you have set aside. Coat tortilla well. Add shredded cheese to the middle of tortilla and roll. Place the enchilada into the baking dish. Do this with all 12 tortillas,
Pour the remaining enchilada sauce on to the rolled tortillas. Cover with remaining cheese.
Place casserole in oven and bake for about 20 minutes. Remove from oven when sauce is bubbly and cheese has melted. Top with chopped scallions and serve. Enjoy!

**You can use the cheese of your choice
7 corn tortillas
2 Tbsp (15 ml ) cooking oil
2 Tbsp (20 g) all-purpose flour
1 to 1 1/2 tsp light chili powder
1 1/4 tsp chicken bouillon powder
1/4 tsp onion powder
1/4 tsp garlic powder
1/8 tsp ground cumin
1 cup (236.5 ml) water
8 x 12-inch baking dish
