Bread crumbs or Kellogg Cornflake crumbs Melted butter or margarine Pound out chicken breasts between two sheets of wax paper until thinned. Put a tbs of cheese in center each chicken breast & roll up & secure with a toothpick. Roll the chicken breast in butter, then in bread crumbs. Place in a microwave dish & cook on high for 6 to 9 min. ~-

2lbs Chicken breast
2 Tbsp flour
2 tsp garlic powder
2 tsp paprika
2 tsp chili powder
1 tsp onion powder
Salt to taste
Brown on both sides and finish in the oven for 10-15 minutes at 350F (depends on thickness)
8oz Pasta
1/2 onion & bell pepper
5 sun dried tomatoes
5 cloves garlic
2 Tbsp tomato paste
1/4 cup stock
1/2 cup heavy cream
1-2 oz Parmesan or pecorino Romano
1/2 cup cherry tomatoes
2-4 oz spinach

Servings: 6 - 8
INGREDIENTS
1 tablespoon olive oil
3 chicken breasts, cubed
Salt and pepper to taste
4 garlic cloves, minced
2 ½ cups chicken broth
2 ½ cups heavy cream
1 pound uncooked penne
2 cups parmesan
2 cups mozzarella
A handful of fresh parsley, chopped
PREPARATION
1. In a pot, heat oil and add chicken. Season chicken with salt and pepper, add garlic, then brown the chicken. Add broth, heavy cream, and pasta, and bring to a boil. Cover and reduce the heat to a simmer for 15-20 min.
2. Turn off heat and stir in 1 ½ cups of parmesan cheese. Pour half of the pasta into a greased 11x7 inch or 9x13 inch baking dish. Sprinkle evenly with 1 cup of mozzarella cheese. Layer the remaining half of the pasta evenly on top. Sprinkle evenly with 1 cup of mozzarella and ½ cup of parmesan.
3. Broil 10 - 15 minutes, or until the cheese is golden brown. Remove and sprinkle with fresh parsley.
4. Serve warm and enjoy!

Easy cheesy baked chicken for busy moms! I got this recipe from my great friend Martina! She’s a mom of three and works full-time and this is her go to dish that makes the whole family happy! And bonus it’s a keto thing! Here’s the recipe:
Three large chicken breasts butterfly them and season them with salt and pepper. Make sure they are room temperature and patted dry.
Mixed together: one block of room temperature cream cheese, half a tablespoon of Tony’s creole seasoning, 1 tablespoon of Italian seasoning, 2 tablespoons of sun-dried tomatoes squeezed dry, and a couple of handfuls of baby spinach rough chopped.
Mix together with a spoon and spread a large spoonful over each chicken breast then topped the dish with 2 cups of shredded mozzarella cheese and a sprinkling of pecorino Romano. Pop in the oven at 400° for 30 minutes.

Important Cooking Notes
- When cooking the chicken make sure it’s not too high heat, then lower the heat when adding garlic, parsley and BBQ sauce
- Mix it all in till coated and juicy, this will give an incredible smokey flavor
- Add the cheese on low heat then cover till it melt, you can add a little water to steam better
- Store in the fridge or freezer then reheat in the air fryer or oven
