Veggie and cheese ratatouille: a delicious and easy meal for a perfect dinner!
This recipe comes together quickly for a fresh weeknight dinner. INGREDIENTS
• 1 onion
• 3 carrots
• 1 red pepper
• 1 yellow pepper
• 1 green pepper
• Tomato sauce
• Salt and pepper
• Basil
• Zucchini
• Eggplant
• Potato
• Tomato
• Cheese slices
• Oils
METHOD
Cut the onion, carrot and peppers into small pieces.
Place in a pan and sauté.
Add salt, pepper and crushed tomato, mix. Add basil.
Place a bed of the mixture on a clay tray.
Cut zucchini, eggplant, potato, and tomato into thin slices.
Place the vegetable slices on top of the sauce, placing slices of cheese between every two slices.
Add oil and basil and bake for 25 minutes at 200ºC (392ºF).

Hey guys!!! So I have shared a couple of desserts so why not for something Christmas dinner. That’s why I have bought you this amazing recipe RATATOUILLE great for Christmas. They are absolutely delicious and can absolutely have fun while making this. There was also a movie made on this so definitely go watch it.
INGREDIENTS:
1. BELL PEPPER- 5 ( GREEN, RED & YELLOW)
2. Olive oil- 1.5 cup (overall cooking)
3. Salt- 3 tbsp( overall)
4. Tomatoes- 8 (overall)
5. Yellow squash/ zucchini- 1
6. Green zucchini- 1
7. Aubergine/ egg plant- 1
8. Ketchup – 2 tbsp
9. Garlic- 4 cloves
10. Onion – 2
11. Carrot – 1
12. Ghee- 3 tsp
13. Bayleaf – 2
14. Basil – 1 tsp
15. Mixed herbs- 2 tsp
16. Sugar- 1 tbsp
17. Chilli flakes- 1 tsp
18. Black pepper powder- 1 tsp
19. Cheddar cheese

RATATOUILLE CASSEROLE RECIPE
This classic French dish originates from Nice. A ratatouille casserole recipe is usually served as a 'stew' with the vegetables chopped up - but after the release of the Disney movie of the same name, many cooks have taken up leaving the veggies in slices. This time however, I made a cheesy ratatouille!
I can't say I've had traditional ratatouille, but I figured I'd add a little to the recipe - CHEESE. Also, if you look at other versions of this same dish, they often use tomato as the base AND in full. I figured this time, I'm just gonna use it as the base..
So this is my take on cheesy ratatouille!
What you'll need:
1 eggplant
2 zucchini
2 yellow peppers
1 red pepper - chopped
1 tomato - chopped
1 onion - chopped
1 6oz can tomato paste
2-3 dashes of basil
2-3 dashes of fennel
1/2 teaspoon minced garlic
3-4 tablespoons softened goat cheese
parmesan cheese
So this dish is SUPER easy to make. The first thing you are going to want to do is chop up the onion, red pepper and tomato.. Chop them up finely because you'll have to blend them and if they are too large they can get stuck.
In a blender, mix together the tomato paste, tomatos, red pepper, onion, garlic, thyme and fennel. Blend until smooth - I used the 'mix' and 'liquify' options on my blender. Once thats done, put it aside.
Cut up the eggplant & zucchini into roughly 1 inch slices or less. Same with the yellow pepper, but these can be a little thicker.
Pour the blended mix into a casserole dish. Make sure it covers the entire bottom. Start layering your eggplant, zucchini and yellow peppers in the dish. Layer them so they are sort of like domino's that have fallen over (or see picture above, video below)
Once that's done, sprinkle some parmesan cheese on top and pop it in the oven. 350° for 1 hour.

How to Cook Ratatouille and Cheese Gratin

In this video I demonstrate how to bake my ratatouille and cheese gratin, a delicious side dish that tastes great hot or cold.
Ratatouille and Cheese Gratin
Ingredients:
2 medium courgettes/zucchini, thinly sliced.
1 medium aubergine/eggplant, thinly sliced.
Half an onion, thinly sliced.
1 medium capsicum/sweet pepper, thinly sliced.
2 tomatoes, thinly sliced.
About 3 tbsps extra virgin olive oil.
About 3 cloves of garlic, finely chopped.
1 tsp herbes de Provence.
Salt and freshlyground black pepper to taste.
500ml Italian passata/sieved tomatoes or 1 can of Italian chopped tomatoes.
Method:
Layer the vegetables in a baking/gratin dish as shown in the video, seasoning each layer with salt, pepper and herbes de Provence. Add about a tablespoon of olive oil per layer.
Finish with a capping layer of courgettes/zucchini and a final splash of olive oil.
Add all the passata/sieved tomatoes.
Cover and bake at 180C/350F for 1 hour.
Remove the lid and add all the grated cheese.
Bake uncovered at 200C/400F for 20 minutes or until the cheese looks perfect.
Serving:
Serve with grilled meat, baked fish, roast meats or steaks. The juices in the bottom of the baking dish make a delicious tomato soup.
Note:
An extralazy way of making this is to dice all the vegetables to roughly the same size, say 2cm cubes, then season it all at once. This saves time layering but it will also change the texture and nature of the finished dish.
