Chocolate Chip Cheese Log
8 ounces cream cheese, room temperature
1/2 cup (1 stick) butter, room temperature 
1/4 teaspoon vanilla
1 1/4 cups confectioners’ (powdered) sugar
3 Tablespoons brown sugar
3/4 cups mini chocolate chips
1 cup finely chopped pecans
Graham Crackers, animal crackers, cookies etc
In a mixing bowl, beat the cream cheese, butter, and vanilla until fluffy. Gradually add sugars. Beat just until combined. Stir in chocolate chips. Cover and refrigerate for at least two hours.
Place the mixture on a large piece of plastic wrap and shape into a log. Roll the log in chopped pecans. Refrigerate for at least one hour before serving. Serve with graham crackers, cookies, etc.
NOTE: Use any flavor of chips you like. If you prefer a ball, roll it into a ball shape instead of a log.

A festive appetizer that not only tastes great but also looks amazing. This is what you need for your little holiday gathering this season. This cheese log can be prepared with goat cheese or cream cheese, yet it tastes even more delicious with goat cheese. The spices are crushed and used to coat the cheese log. It's so easy to do that at home and you will just need a few minutes to make it from scratch. The spices are a selection of peppers and they work well with the goat cheese flavors. Your family and friends are going to be crazy for this appetizer.

Ingredients
4 oz Cheese Log *see Notes
1 Tablespoon Black Pepper *see Notes½
1 Teaspoon Pink Peppercorn
1 Teaspoon Green Pepper or White Pepper
¼ Teaspoon Salt
½ Teaspoon Crushed Red Chili Pepper Flakes (optional)

16 oz. cream cheese, room temperature
8 oz. Pepper Jack cheese, shredded
1/3 cup Parmesan Cheese, shredded
Scant 1/4 cup mayonnaise
1/2 tsp minced garlic
1/4 cup green bell pepper, finely diced
1/4 cup red pepper, finely diced
3 green onions, tops included, sliced
2 cups pecans, finely chopped
1 cup Craisins, chopped
Combine cream cheese, Pepper Jack cheese, Parmesan Cheese, mayonnaise, and garlic.
Mix in the green bell peppers, red peppers, and green onions just until combined. Do not overbeat.
Spread the pecans and Craisins on to a long piece of plastic wrap. Wet your hands so the cheese mixture doesn’t stick to you. Form the mixture into a long “log” and use the extra pecans and Craisins to cover the top, sides, and ends of the log.
Once coated with nuts and Craisins, use the plastic wrap to tightly cover the cheese log and use your hands to finish forming the log into shape.
Refrigerate two to three hours, or overnight, before serving.

2- 8 ounce packages cream cheese
20 oz. can crushed pineapple, well drained
1 cup chopped pecans
1/4 teaspoon salt
2 cups extra chopped pecans to roll it in
Combine cream cheese, drained pineapple, pecans, and salt in a medium bowl. Mix well using an electric mixer or by hand.
Form into a log. Roll in extra pecans to coat the outside of the log. Cover and refrigerate. 
Serve with crackers.
