How To make Cheese Fondue 1
8 oz Natural Swiss cheese,diced
8 oz Gruyere cheese,diced
2 tb Flour
1 Clove garlic,halved
2 c Dry white wine
1 tb Lemon juice
3 tb Kirsch
French bread,1" cubes Place cheese in plastic bag; sprinkle with flour. Toss until cheese is coated. Rub cut clove of garlic on bottom and side of 3-quart saucepan; add wine. Heat over low heat just until bubbles rise to surface (wine must not boil). Stir in lemon juice; add cheese, about 1/2 cup at a time, stirring constantly with wooden spoon. Stir until cheese is melted. Stir in kirsch. Pour into ceramic fondue pot over low heat. Use long-handled forks to spear bread cubes; then dip and swirl in fondue with stirring motion. NOTE: The Swiss cheese should be aged at least 6 months.

Our cheese Fondue recipe is easy to make at home.
You should not be intimidated to make Fondue. If you follow the instructions, you can make beautiful cheese Fondue in no time.
Our favorite cheeses for Fondue is Gruyere and Emmentaler. You can use any hard melting cheese. Another good cheese is Jarlsberg.
Recipe
Ingredients:
8 oz- Gruyere cheese- grated
8 oz- Emmentaler cheese- grated
1 ea= garlic clove
2 TBSP- corn starch
1 cup- dry white wine
1 tsp- lemon juice
1 TBSP- Kirsch (cherry brandy). This ingredient is often used, but I find it optional. I have made Fondue many times
without Kirsch and can be just as delicious without it.
pinch- nutmeg
pinch- dry mustard powder
1 ea- crunchy loaf bread cut in to bite size pieces. (Our choice here is baguette)
Method:
Rub the garlic clove all over your cooking vessel and discard.
After the cheese is grated, add the corn starch to the cheese and mix well.
Add the white wine and lemon juice to your cooking vessel and bring to a simmer.
Slowly add the cheese, one handful at a time and stir slowly until the cheese is completely melted
before adding another handful.
Once all of the cheese is melted and smooth, add Kirsch, nutmeg and mustard powder. Stir in to the mixture.
Keep the mixture warm on the cooktop.
Dip the bread pieces into the cheese and enjoy.
Notes:
You may use a fondue pot for serving, or you can just use the pot that it was made in. You will just have to keep on the cooktop to keep it warm.
Do not overheat the cheese as it may start to ball or get oily.
Maintain consistent heat during cooking.

Servings: 2-3 pax
Ingredients:
- 200g Shredded Cheese of choice (I used Gruyere or Swiss Cheese)
- 1 tbsp Cornflour
- 100ml Low Sodium Chicken Stock
- 100ml Milk
- 1/2 tsp Minced Garlic
- 1 tbsp Lemon Juice
Optional:
- 1/4 tsp Ground Sweet Paprika
- 1/4 tsp Ground Nutmeg
- 1/l4 tsp Ground White Pepper

Ingredients:
½ pound each of gruyere and jarlsberg
1 cup of dry white wine
2 tablespoons of all-purpose flour
1/4 teaspoon of salt
1/4 teaspoon of ground nutmeg
Directions:
First shred your cheese because this will make the melting process smoother and easier. In a small pot add your white wine and simmer on med low heat. Once it's hot, add in your flour and whisk it until it's dissolved and no lumps remain. Now, add your shredded cheeses one handful at a time. Then turn your burner down to low because you're looking for a slow and even melt. You don't want to burn or boil. Once it's melted, stir in your salt and nutmeg and then transfer the cheese dip to your fondue pot!
The trick to having an amazing fondue experience is having a variety of delicious things to dunk. Today, i'm using the typical bread cubes, but i'm also throwing in some roasted veggies like butternut squash and brussel sprouts. Some baby heirloom tomatoes for color, chicken & apple sausages, because you need to have some meat, and fruits that pair well with cheese like an apple! I like to arrange the food in pretty rows on a big platter next to the fondue pot.
