How To make Cayenne Pepper Wafers
1/2 lb Gruyere cheese, grated
1 c Unsalted butter, at room
Temperature 1 ts Cayenne pepper
1 ts Salt
2 1/2 c Sifted all-purpose flour
1 c Chopped walnuts or pecans.
Heat the oven to 350F. Cream the cheese and butter. Sift together the cayenne pepper, salt and flour; add gradually to the butter mixture. Add the chopped nuts and mix well. Divide the dough in half and shape into logs 1 1/2 inches in diameter. Wrap well and refrigerate for at least 1 hour. Line baking sheets with parchment paper. With a sharp knife, cut the logs into 1/4-inch thick slices. Place the wafers 1 to 2 inches apart on the baking sheets. Bake for 15 to 20 minutes, until lightly colored. Ingredients:
140 gm (1 cup) whole wheat flour
100 gm (1/2 cup) butter
200 gm (1 1/2 cups packed) cheddar cheese, grated
1/2 tsp cayenne pepper or red chilli powder or paprika powder
1 tsp salt
Method:
- In a large bowl, with the help of a hand held mixer blend the butter and cheese until smooth. In another bowl mix in the flour salt and chilli powder.
- Stir the dry ingredients into the butter and cheese and mix well with your hands until the dough comes together.
- Alternatively, cut chilled butter and cheddar cheese into cubes and process in a food processor fitted with a metal blade. put in the dry ingredients and process again until you you have a smooth dough. Do not over process the dough.
- Form the dough into a ball and knead briefly for a minute or two and then divide into 2 equal halves. Roll the dough into a log and wrap with baking parchment or grease proof paper. Twist the ends to seal it (like a toffee wrapper).
- Chill the logs for 3 to 4 hours in the refrigerator. If you are in a hurry, put the logs in the freezer for about 30 minutes. This makes it easier to cut into slices.
- Unwrap the chilled dough. Cut into 1/4” slices. Place them on a baking sheet covered with parchment or grease proof paper.
- Bake in a preheated oven at 200 degrees centigrade (400 F) for 10 to 12 minutes or until browned at the edges. If you have cut your slices very thin, it could be done in 8 minutes.
Note: Depending on your oven and your preference the baking time for these could vary from 8 to 12 minutes. I like my wafers crispy and browned and bake it for longer, more like 10 minutes.

Todays vintage recipe is cheese wafers! Crunchy, cheesy biscuits that make for great snacks! I also talk a little about what to do if your recipe isn't coming together the way you expect.
Original 1984 Recipe:
2c. grated cheese (medium sharp cheddar)
2 sticks margarine
2c. Rice Krispies
2c. all-purpose flour
dash of red pepper (if desired)
Soften margarine and grated cheese. Add flour and mix well. Add Rice Krispies; mix and shape into small balls. Place on a foil-lined cookie sheet, ungreased. Flatten balls with fork dipped in flour. Bake at 350° for 10 minutes. Remove and place on heavy brown paper or paper towel to cool. Store in air tight container.
