How To make Carne Adovada (Marinated Pork)
4 lb Pork(ribs, chops or other)
2 t Salt
3 ea Garlic cloves, crushed
2 t Whole leaf oregano
1 qt Blended red chili sauce
Sprinkle meat with salt. Add garlic and oregano to blended chili. Pour over meat and marinate in refrigerator 6-8 hours or overnight. Cook slowly on top of stove or in 350 oven until meat is done, about 1 hour. Thick slices of potatoes may be marinated with the meat.

How to Make the Best Carne Adovada - BurqueñoBQ
Carne Adovada is a traditional New Mexican dish consisting of pork marinated in Hatch Red Chile sauce. When I make Carne Adovada, I like to use smoked pork tenderloin because it is such a lean yet juicy and flavorful cut of meat.
Once the pork has absorbed a ton of smoke flavor, I cover it in Red Chile Enchilada Sauce, add some lime and salt, and cook it in the oven until the meat is so tender that it shreds apart.
