Ingredients and process:
Marinate four pieces of chicken with: soy sauce 2 tbsp, dijon mustard 1 tbsp, chicken bouillon powder 1 tbsp, cumin 1 tbsp, salt and pepper to taste; let stand for two or hours or overnight.
Make your own coconut milk is very easy, you just need to grate a coconut and let it rest with two cups of boiling water for an hour. You can skip this process and use ready-made coconut milk.
Melt 1/3 cup of sugar with oil and cook the chicken four minutes on both sides.
In a blender add: an onion, two cloves of garlic, a potato, a tomato and coconut milk. Add this sauce to the chicken and cook for twenty minutes.
Add a bit of fresh thyme for a better flavor; This is the best Caribbean recipe you are going to try, I am sure it will be your favorite!!!
