How To make Cantonese Sweet & Sour Chicken
1 Whole chicken breast
skinned and boned 1 tb Cornstarch
1 tb Kikkoman Soy Sauce
1 ts Minced fresh ginger root
1 cn Mandarin orange segments
:
(11 oz.) 2/3 c Kikkoman Sweet & Sour Sauce
2 tb Vegetable oil; divided
1/2 lb Fresh snow peas; trimmed
5 Green onions & tops
-- thinly sliced 1/2 c Unsalted roasted cashews
Cut chicken into 1-inch pieces. Combine next 3 ingredients and chicken; let stand 15 minutes. Meanwhile, reserving 1/4 cup syrup, drain mandarin oranges. Blend reserved syrup with sweet & sour sauce; set aside. Heat 1 Tbsp. oil in hot wok or large skillet over medium-high heat. Add chicken and stir-fry 2 minutes; remove. Heat remaining 1 Tbsp. oil in same pan. Add snow-peas; stir-fry 1 minute. Add green onions; stir-fry 30 seconds longer. Add chicken, cashews and sweet & sour sauce mixture; cook, stirring, until all ingredients are coated in sauce. Gently stir in mandarin oranges; heat through. Sweet And Sour Chicken Recipe | Sweet And Sour Chicken with Pineapple | Sweet And Sour Chicken Restaurant Style | Sweet And Sour Chicken | Chinese Sweet And Sour Chicken | Sweet And Sour Chicken by Spice Eats
Ingredients for Sweet and Sour Chicken:
- Boneless chicken, bite sized pieces- 300 gms
For marination:
- Salt- 1/2 tsp
- Pepper powder- 1/2 tsp
For the Batter:
- Maida/All Purpose Flour- 3 tbsp measure
- Cornflour- 2 tsp measure
- Baking powder- 1/4 tsp
- Salt- 1/4 tsp
- Egg white- of 1 egg
- Chilled Water- 4 tbsp
Sweet & Sour Sauce:
- Tomato Ketchup- 4 tbsp
- Sugar- 3 tbsp
- White Vinegar- 3 tbsp
- Dark Soy Sauce- 3/4 tsp
Other Ingredients:
- Green bell peppers/capsicum, cubed- 1 cup (around 70 gms)
- Red bell peppers/capsicum, cubed- 1 cup ( around 70 gms)
- Oil- 1/2 tbsp oil + oil for deep frying the chicken
Preparation:
- Wash and leave the chicken pieces/fillets to drain.
- Pat dry if required and cut them into bite sized pieces. You could use a mix of boneless dark and white meat, makes the chicken pieces moist and juicy.
- Marinate with salt and pepper powder and set aside for 20 mins.
- Add all the ingredients of the sweet and sour sauce in a small bowl and give a mix. Set aside for use later.
- Prepare the batter/mix as per ingredients specified above.
Process:
- Heat oil for deep frying in a skillet or wok or kadai.
- Once the oil is medium hot, dip the marinated chicken pieces in the batter and drop them in oil side by side to not crowd the pan.
- Fry the chicken pieces on medium heat for 1 minute without turning them.
- After that keep turning & frying the pieces for another 4-5 mins till golden in colour. Take it out & repeat the same with the next batch.
- Now take a wok or kadai and add 1/2 tbsp oil.
- Keep it on high heat and add the cubed peppers. Stir fry on high heat for 1 minute and then add the sweet & sour sauce. Mix and continue to fry on high heat for another minute till the sauce is cooked and thick.
- Now add the fried chicken pieces, give a mix and continue to stir fry to coat the chicken pieces well with the sauce. This should take around 2 mins.
- Serve with noodles or fried rice.

Baking Powder: 1 tbsp
Corn Starch: 1/4 cup or 31 g
Veg. Oil: 3 tbsp
Flour: 1 1/4 cup or 157 g
(You can also use self-rising flour as well, decrease the amount of baking powder by 1/2.)
Sauce:
Water: 10 cups or 2.3 L (boiled down to) 8-9 cups or 1.9 L or 2.2 L
Valencia Orange: 2 oranges
Lemon: 1 lemon
Ginger: 2-3 slices
Vinegar: 1 cup or 236.6 mL
Sugar: 2 cup or 473 g
Ketchup: 1 1/4 cup or 300 mL
or
(single servings)
Water: 1.25 cup or 300 mL (boiled down to) 1 cup or 236.6 mL
Sugar: 4 tbsp 1/4 cup or 60 g
Vinegar: 2 tbsp or 1/8 cup or 30 mL
Ketchup: 2.5 tbsp or 1/5 cup or 35 mL
Lemon: 1/4 of a Lemon
Valencia Orange: 1/2 of Orange
Ginger: 1 slice

For 2 people you will need:
2 chicken breasts
1 tsp sesame oil
1 tsp light soy sauce
1 tsp sugar
1 egg
200g cornflour
A little water
A good pinch of salt and pepper
1-1.5 litres of cooking oil for deep frying
For the sweet and sour sauce you will need:
The juice from half a lemon
4 tbsp vinegar - malt or black
4 tbsp ketchup
4 tbsp sugar
1/2 green pepper
1/2 an onion
1cm cube of ginger, finely chopped
A small tin of pineapple cubes (optional)
1 tsp dark soy sauce
1tbsp cooking oil
1/2 tbsp cornflour mixed with 2 tbsp of water to thicken
