Spicy California Shrimp Stack
INGREDIENTS
1 1/3 cups cooked brown rice
2 tablespoons rice vinegar
8 ounces cooked shrimp, peeled, tails removed and chopped
1 cup cucumber, seeded and diced
1/2 cup avocado, mashed
4 teaspoons toasted sesame seeds
4 teaspoons reduced-sodium soy sauce
4 teaspoons mayonnaise
1 teaspoon sriracha sauce
PREPARATION
1. Cook rice according to package directions, omitting salt and oil.
2. When rice is done, add rice vinegar and stir. Evenly spread rice on a sheet pan to cool.
3. In a small bowl, combine mayonnaise and sriracha sauce.
4. Using a round food ring mold, layer 1/3 cup or rice, them 1/4 of the shrimp, then 2 tablespoons of avocado, then 1/4 cup of cucumber.
5. Using a 1 cup dry measuring cup, layer 1/4 cup cucumber, then 2 tablespoon of avocado, then 1/4 of the shrimp, and 1/3 cup rice.
6. Carefully turn the cup upside down to turn the stack out onto a plate, lightly tapping the bottom of the cup if necessary.
7. Sprinkle with Toasted sesame seeds and drizzle with 1 teaspoon soy sauce and sriracha mayonnaise. Repeat with remaining ingredients.

30-35 large shrimp

1 stick unsalted butter
1/4 teaspoon ground black pepper
2 tablespoons minced garlic
1 tablespoon fresh parsley
4 tablespoons cornstarch
1/2 lemon juice

Pad Kaprow Koong | Thai Basil Shrimp | Kravings
Thai food is simply incredible – the balance between sweet, spicy, salty and sour is what makes for the perfect dish. Some dishes are heavy on Tamarind, or peanuts while some rely on the creaminess of coconut milk. This recipe sings with the magic of Thai Basil. If you cannot find Thai Basil where you live, you could substitute regular basil as well.
I’ve prepared the same dish before using Chicken – Pad Kaprow Gai, but it was time for me to take Shrimp to the next level as well.
Here are the ingredients and steps to make this recipe!
Pad Kaprow Koong
1 tsp white Peppercorns
12 cloves of Garlic
1 large red Finger Chilli
5 red Thai Chillies
1 tsp Salt
1 lb (500 gms) Tiger Shrimp - these gorgeous Shrimp have already been shelled and deveined.
¼ cup Oyster sauce
2 tbsps light Soya sauce
½ tbsp Fish sauce
1/2 tsp Palm sugar or regular sugar
1 cup Thai Basil
Fried Egg to serve optional
