Calabacitas (Spanish word for squash)
2 tablespoons olive oil or canola oil
2 zucchini diced
2 yellow squash diced
1 ear of corn, kernels removed
Half onion diced
1-teaspoon kosher salt
½-teaspoon garlic powder or 1 clove diced
½-teaspoon black pepper
Dice some onion, zucchini, and yellow squash and set aside in a bowl. Clean and prepare an ear of corn and remove the kernels using a bowl to keep them all together. I like to use a bowl so that it catches all the kernels and they don’t spread all over. Now heat a medium size sauté pan on medium to high heat, add oil, then add mix to pan and stir occasionally for 20 minutes. After 10 minutes of cooking, add garlic and black pepper and salt. Continue cooking until softened. Serve with enchiladas, beans, tamales, or in a burrito. It is mainly a side dish, but can easily be made into a main dish!

Classic Calabacitas Con Pollo y Elote / Chicken and Squash with Corn ❤️ Step by Step
If you’re looking for a hearty but soupy dish, this is it! CALABACITAS CON POLLO Y ELOTE is a Mexican style Chicken and squash with corn dish, and it is loved by everyone I know, and it’s delicious year round but it’s especially perfect during chilly and cold days. I love using bone-in chicken pieces when preparing this dish, and I make sure to sear it well before adding the rest of the ingredients because I think that is where the amazing flavor starts, just like when you sear a good steak. Tatuma (Mexican squash) is my first choice when preparing this dish, but zucchini works very well too. The sweetness of the canned corn with liquid is always a perfect addition because it adds so much added flavor along with the freshly ground spices. This delightful dish can be enjoyed with beans or Mexican rice on the side and corn or flour tortillas. I hope you give it a try.❤️
INGREDIENTS ______________________
1 1/2 Tbsp vegetable oil
2 bone in chicken thighs (skin off)
3 chicken legs (skin on)
2 lbs Mexican squash or zucchini
1 C. diced onions
2 small diced celery ribs
1/3 C. orange bell pepper (green or yellow is fine)
1 heaping C. diced tomatoes -canned or fresh is fine
1 can sweet corn with 1/2 liquid
2 C. Chicken broth
1 Tbsp chicken bouillon (I used KNORR)
chopped cilantro as needed
Salt as needed
MOLCAJETE INGREDIENTS _______________
1 tsp whole cumin
1 tsp peppercorn
1/2 tsp Mexican oregano (optional)
3 large garlic cloves
1/2 C. Water
1/8 salt for easy grinding (optional)

INGREDIENTS
2 1/2 lbs (1.13 kg) cubed boneless pork loin or pork shoulder meat
*seasoning mix for meat*
1 tsp (5 g) salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp ground cumin
1/4 tsp black pepper
1 medium onion chopped (140 g)
3 cloves of garlic minced (18 g)
1/2 tsp salt (2.5 g) *add during sauté of onion and corn*
1/2 tsp Mexican oregano
kernels from 2 ears of fresh sweet corn (295 g)
*you can substitute with canned or frozen corn*
2/3 cup (190 g) crushed tomato
1 1/2 cup (350 mL) low sodium chicken broth
4 medium Mexican squash (860 g) chopped or sliced 1/2 inch thick
*you can substitute with zucchini*
1 large jalapeño (optional)
a bunch of fresh cilantro (optional)
*I used a 6 quart pot with a lid
INSTRUCTIONS
- In a small bowl mix salt, pepper, ground cumin, onion powder and garlic powder
- Season cubed pork meat with seasoning mixture and combine well
- In a preheated pot, over a medium high heat, add 2 to 3 Tbsp oil and brown half of your meat for 10 minutes
- Remove cooked meat, repeat the process to brown the other half of the meat
- Remove all browned and cooked meat from the pot, place in a bowl and set to the side
- In the same pot, lower the heat to a medium to medium low heat, add a little oil if needed, add chopped onions, a pinch of salt and sauté until onions are softened
- Now add garlic, fresh corn, another pinch of salt, Mexican oregano, jalapeño and continue to sauté for another minute
- Now add low sodium chicken broth, removing and mixing any fond at the bottom of the pot
- Add crushed tomato and combine
- Now add cooked pork meat and sliced or chopped squash
- Combine well
- Add a small bunch of fresh cilantro on top
- Bring everything to a simmer, cover with a lid and lower the heat
- Cook and simmer for 20 to 25 minutes
- This recipe serves 6 to 8 servings

REZEPT UND ZUTATEN:
4 Zucchini.
Salz.
Mischen.
10 Minuten einwirken lassen.
2 Zwiebeln.
Sonnenblumenöl.
Abdecken und bei mittlerer Hitze garen!
1 Karotte.
Zugedeckt bei mittlerer Hitze 5 Minuten garen!
4 Paprika.
Salz. Schwarzer Pfeffer.
Zugedeckt 5-7 Minuten bei mittlerer Hitze garen!
Wasser aus Zucchini entfernen.
Zucchini zugeben und gut vermischen.
Zugedeckt bei mittlerer Hitze 15 Minuten garen!
3 Eier.
Milch 300 ml. / 1,5 Tassen.
Olivenöl 30 ml.
Mehl 5 Esslöffel.
Backpulver 10 gr.
Sehr gut mischen.
5 Minuten vor Ende den Knoblauch dazugeben!
Dill.
Mischen.
Sonnenblumenöl.
Gemüse ist fertig.
Fügen Sie die Mischung hinzu und verteilen Sie sie.
Käse 150 gr. / 1-2 Tassen.
Es wird sooo lecker!
Im Ofen 35-40 Minuten bei 180°C (350°F) backen.
Mayonnaise 2 Teelöffel.
Joghurt 3 Teelöffel.
Saft von 1/2 Zitrone.
Grüne Zwiebel.
