CEVİZLİ BİBERLİ
½ stale bread or 5 slices stale bread
½ cup of water
1 small onion, grated
1 garlic clove, grated
2 cups of walnut
1 tablespoon red pepper paste
3 tablespoons tahini
5 tablespoons olive oil
• Take out the inside part of the stale bread, soak it in the water for a while and then squeeze the excess water.
• Place the soaked bread and walnuts on a meat grinder or food processor to make the base paste.
• Add the onion, garlic, red pepper paste, tahini to the base and mix.
• For the taste to settle it needs at least two hours. To serve, put the “cevizli biberli” in a plate, make a pit with the back of a spoon and pour the olive oil.

1 onion, sliced
1 red pepper, diced
2 green peppers, diced
3 tomatoes, skinless and diced
3 garlic cloves, chopped
4 tablespoons olive oil,
5 tablespoons pomegranate sour, you can buy ours or you can make your own
1 pinch of red pepper flakes
7-8 sprig of parsley, chopped
Salt
• Poke the eggplants with a knife and make few holes. Then char grill them. You can easily grill on them directly on fire or use our griller ( When they are all soft, transfer them in a plate and cover with a lid. Let it sit for 5 minutes to peel them easily.
• Add a good pinch of salt to the onions, red peppers, green peppers and garlics. Roughly rub them until they get softer.
• Peel the eggplants and chop them. Add a pinch of salt.
• Mix the rubbed vegetables, tomatoes, and eggplants in a bowl, add the olive oil, pomegranate sour, salt to your taste and red pepper and mix. Lastly, sprinkle the chopped parsley and serve.

3-4 tablespoons pomegranate sour, you can buy ours or you can make your own

Lettuce or grape leaves
• Grate the tomatoes on a tray. Add the bulgur and let it soak the tomato juice for 10-15 minutes.
• Add the red pepper paste, pomegranate sour and olive oil. Knead well for 5-8 minutes until all bulgur gets its share from the mixture. You can add some salt according to saltiness of your pepper paste.
• Add in the parsley and spring onions and gently mix.
• Lay lettuce or fresh grape leaves on a dish and sprinkle the sarma içi on top. It is important to add loosely. Use the leaves like a spoon and enjoy your delicious sarma içi.

Vegan Bulgur Pies Stuffed with Tahini Onion and Curry | Bulgur Bread
Please note: I added 1 tablespoon salt in the stuffing (optional) or to your liking.
For the stuffing
5 pounds diced onion
1 1/2 cups thick tahini
4 tablespoons of curry powder
1 1/2 tablespoons salt or to your liking
For the dough
1 1/2 cups fine bulgur ( Tabula bulgur # 1 )
2 1/2 pounds all purpose flour
1 1/2 tablespoon salt
1 tablespoon fennel seeds ground
1 tablespoon caraway seeds
1/2 cup vegetable oil
1 cup warm water
1 1/2 tablespoon dry yeast mix with 1 tablespoon sugar and one cup of hot water
2 tablespoons of tomato paste mixed with half a cup of cold water
Bulgur & Lentils: Easy Mujadara Recipe

Ingredients
1 cup Bulgur wheat
1 bay leaf
1 cup green or brown lentils
2 cups water or stock
salt, to taste
freshly cracked black pepper to taste
3 large onions, halved and thinly sliced
1/3 cup olive oil or more
1/2 teaspoon ground cumin
lemon wedges for serving
Garnish: finely chopped parsley
Instructions
Sort the lentils. Rinse and drain.
Bring 5-6 cups of water to a boil. Add the bay leaf and a teaspoon of salt along with the lentils. Cook for 15 minutes and then drain the water.
In the meantime add the onions to a shallow skillet. Season with a heavy pinch of salt and add the olive oil. Cook the onions over medium-heat until golden. About 20-25 minutes. Remove from the heat and set aside.
Add the bulgur, cooked lentils, salt, pepper, cumin, and 2 cups of water or stock to a pot. Bring to a boil. Reduce the heat to low and simmer for 20-25 minutes. Fluff and transfer to a serving platter.
Top with the caramelized onions and garnish with parsley and lemon wedges.
The mujadarah pairs well with Greek yogurt and a cucumber salad.

INGREDIENTS:
DRY INGREDIENTS:
1 cup almond flour
1 cup arrowroot flour
1/3 cup coconut flour
1 tsp sea salt
2 tsp active dry yeast
1 ½ Tbsp very finely ground chia seeds
2 Tbsp organic psyllium husk powder
WET INGREDIENTS:
1 ¼ cup filtered water
2 tsp maple syrup (This is consumed by the yeast, which lowers the glycemic index.)
1 egg
DIRECTION:
In a large bowl, whisk together the almond flour, arrowroot flour, coconut flour, and sea salt.
Heat water at 105-110 °F. Add 2 tsp of maple syrup and stir. Add the yeast and let the mixture stand for 10 minutes. The yeast should bubble or foam. If it doesn’t, start all over again.
Stir the finely ground chia and psyllium powder into the yeast mixture. Let it stand for 1 minute to thicken, then whisk.
Pour the thickened yeast-chia mixture into the dry ingredients, and mix with a wooden spoon until thick and fully combined. The dough will be slightly sticky, but workable. Knead for 1 minute.
Put the kneaded dough back into the bowl. Cover with a damp cloth and place in a warm spot to rise for 1 hour.
Preheat the oven at 425 °F with a pizza stone (or cooking sheet) inside.
Divide the dough into two balls. Place one of the dough balls on a square parchment paper or a cutting board. Dip your hands in water and shape the other big dough ball into small round balls. Brush with egg wash, if desired. Use a serrated knife to cut a tic-tac-toe pattern on the top.
Slide the prepared dough onto the preheated stone or cooking sheet. Bake for 35-40 minutes. Please note that baking time can vary; the measure of doneness is an internal temperature of 205-210 °F.
Let your baked goodies cool completely on a wire rack. (Not allowing the loaf to fully cool before cutting may result in a gummy interior.) Once completely cooled, slice and serve, or store in an airtight container. To re-crisp crust, toast or reheat at 375 °F for 5-10 minutes.
