Super Quick Stir Fry Broccoli and Carrot with Chicken | Chicken with Broccoli Recipe
300 grams of broccoli
1/2 carrot
3 cloves of garlic
250 grams of chicken breast
A pinch of salt
A pinch of black pepper
2-3 tablespoons of oil
1 tablespoon of light soy sauce
2 tablespoons of oyster sauce
1/2 teaspoon of dark soy sauce
1/2 cup of water
Corn starch slurry - 1 teaspoon of corn starch + 2-3 teaspoon of water

Here is what you'll need!
Chicken & Veggie Stir-Fry
Servings: 6
INGREDIENTS
1 pound chicken breast, cubed
Salt, to taste
Pepper, to taste
1 pound broccoli florets
8 ounces mushrooms, sliced
3 tablespoons oil for frying
Sauce
3 cloves garlic, minced
1 tablespoon ginger, minced
2 teaspoons sesame oil
⅓ cup reduced sodium soy sauce
1 tablespoon brown sugar
1 cup chicken broth
¼ cup flour
PREPARATION
1. In a large pan, on medium-high heat, add 1 tablespoon of oil. Once the oil is hot, add chicken, season with salt and pepper, and sauté until cooked through and browned.
2. Remove cooked chicken from pan and set aside.
3. In the same pan, heat 1 tablespoon of oil and add mushrooms. When the mushrooms start to soften, add broccoli florets and stir-fry until the broccoli is tender. Remove cooked mushrooms and broccoli from the pan and set aside.
4. Add 1 tablespoon of oil to the pan and sauté garlic and ginger until fragrant. Add the remaining sauce ingredients and stir until smooth.
5. Return the chicken and vegetables to the saucy pan, stir until heated through.
6. Serve with hot rice or noodles.
7. Enjoy!

This super easy and delicious Chinese broccoli and chicken recipe is one of my favorite quick chicken dinner recipes. I usually make a large batch of this dish as the leftover tastes even better and it works great with rice, vermicelli noodles or as a lettuce wrap filling.
Chicken and Broccoli:
Ingredients:
1 lb/450 g boneless chicken
1 small head of broccoli
5-6 cloves of garlic
1 tsp minced ginger
1 green onion
3 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp honey
1/2 tsp pepper
1 tbsp cornstarch
1 cup chicken broth/stock
Cooking oil and salt as needed
Tips:
• Keep in mind that salt has been added to chicken and broccoli before adding too much salt to the sauce. You can always add more salt but cant remove it
• If it ends up being too salty, add some sugar to balance it out
• If you want it less saucy, reduce chicken stock to 1/2 cup
• No oyster sauce?
Replace with 2 tsp soy sauce + 2 tsp sugar
• No chicken stock/broth?
Replace with water or use bouillon cube
• No fresh garlic or ginger?
Replace with 1 tsp garlic powder and 1/2 tsp ginger powder. Add it to the sauce mix
• No honey?
Replace with sugar, maple syrup or any other sweetener

Just to be clear, you don't have to only eat chicken and rice to be healthy and fit. I make this because I love it and it can cook while I work around the house. There will be some heavier, creamier dishes later!
If you're worried about salmonella from rinsing your chicken, just wash your sink. My reasoning is that I don't know what touched the chicken before it was packaged. Yes you can kill bacteria and germs with heat, but there can also be various chemical, debris, and others. Plus, we should regularly clean our sink anyway. If you don't want to rinse, you don't have to!

Easy & Healthy Chinese Chicken & Broccoli Stir Fry ~ Chinese Wok Recipe
INGREDIENTS
1 large sliced chicken breast
2 cups broccoli florets
1 sliced carrot
oil
water
slurry - equal water and starch
Chicken marinade:
2 tbsp. soy sauce
2 tsp. rice wine
1 large egg white
1 1/2 tbsp. cornstarch
Sauce:
1/2 to 3/4 cup chicken broth
2 tbsp. oyster sauce
2 tsp. dark soy sauce
3 cloves minced garlic
1 -2 tsp. minced ginger
white pepper
drizzle sesame oil
Prepare all ingredients before cooking.
Mix chicken, soy sauce, rice wine, egg white and cornstarch. Cover and refrigerate for 30 minutes.
Mix all ingredients for sauce and whisk well.
Blanch broccoli florets and carrots.
When water comes up to a light boil add chicken and give one or two pushes so not to stick together. Blanch for about 2 minutes and remove.
Clean wok and add sauce. Bring up to a simmer for one minute.
Add chicken, broccoli, carrots and slurry.
Stir until thickened and all chicken and veggies coated.
Remove from heat immediately.
Serving with rice. Enjoy.
