How To make Brenda's Black Bean Soup
3 c Dried black beans
2 Ham hocks
1 Bell pepper; chopped
1 sm Onion; chopped
1 Whole sour orange
-=OR=- tangerine 1 tb Vinegar *
1/2 c Oleo
2 tb Flour
Salt and pepper to taste * (if you used a sweet orange or tangerine) Put your beans in a soup pot and cover with water. Boil, take off the fire and let sit til cool. Cook onions and bell peppers in 1/2 the oleo until limp. Add them and the ham hocks and orange to the cooled beans; cover charitably with water. Simmer until beans is soft (1 to 2 hours). Fish out the orange right now, before it gets tore up. With the rest of the oleo, brown the flour in a black frying pan, then stir it into the beans. Brenda says: "Make sure you got a soup, now. 15 Bean Soup
How’ve You Bean Soup:
1 tablespoon extra virgin olive oil
1 large yellow onion, diced
3 large celery stalks, sliced
1 bulb garlic, minced
1 bunch parsley, stems removed and chopped
1 tablespoon Italian Seasoning
1 14oz can diced tomatoes
1 14oz can tomato sauce
Splash of tobacco
1-2 tablespoons better than bullion vegetable
10 cups water broth
1lb beans, soaked overnight
1. To a large oiled soup pot, over medium heat, add onions
and celery. Sauté until onions are translucent.
2. Add garlic and stir until fragrant
3. Add Remaining ingredients
4. Allow soup to simmer for several hours until beans are
soft.
5. Serve with bread and a tossed salad.
SOUTHERN STYLE BLACK EYED PEA WITH HAM HOCKS
HELLO EVERYONE!!! Today I’m sharing a southern classic recipe that I remembered as a child. My Mother cooked black eyed peas along with fried chicken, pork chops gravy steaks and the list goes on. BLACK-EYED PEAS WITH HAM HOCKS
16 oz. pkg Black-Eyed Peas
2-3 Smoked Ham Hocks
6-8 Cups Water
1/2 Medium Onion
1 Tablespoon Onion Powder (optional)
Salt and Pepper to taste
1 Tablespoon Sugar (Optional)
1 Tablespoon of Bacon Drippings or
Fried Oil
Chopped Jalapeños if you prefer
On Stovetop: Cook Ham Hocks for 2 1/2-3 hours or until tender.
Pressure Cooker: Cook for 1 hour
After adding peas to pot Simmer for 45-55 minutes or until the peas are done and the texture you prefer. Enjoy!!
