How To make Breakfast Sausage Links
4 ts Kosher salt
1/2 ts Dried thyme
2 ts Dried leaf sage, crumbled
1 sm Onion, finely chopped
2 lb Lean pork,trimmed,cut 1/2">>
Cubes and chilled 3/4 lb Fresh pork fat, cut 1/2">>>

Combine salt, thyme, sage and peppercorns in spice mill or mortar and grind to pwdr. Sprinkle onion and spices over meat & fat in bowl and mix well. Put 1/2 of mixture in food processor and process to fine pure. Remove to bowl and repeat with remaining 1/2. Cover and refrigerate for at least 6 hrs., but
no more than 24 hrs. Stuff casings, tying every 3". Refrigerate sausages at least 12 hrs, or for as long as 48 hrs. For longer storage, freeze.

Hello! Welcome back and if you are new we are glad to have you. Today we are cooking breakfast sausage links. I was a fan of Hormel sausage links in the frozen food section but they are hard to find. So I was a little intimidated about sausage links in a casing. Now I am a fan. So I can have Ihop and Denny's at home. So lets get to cooking!!

Creating the PERFECT Breakfast Sausage Recipe!
Our Quest for the perfect Breakfast Sausage Recipe started a few weeks ago, when I ran out of store-bought patties. I ground up a 7# pork butt, and whipped up a quick 1 lb. batch of what I thought would be good - and it wasn't. Thus started my quest to find a perfect recipe.
Food recipes aren't always a science, there is often art involved. Free-range thinking and innovation go a long way in the culinary world - but to be successful on this quest, I needed a good starting point. So I began to analyze different recipes, in an attempt to identify the most common ingredients used, along with averaging out their quantities. From there, I could branch out, and start to introduce less common ingredients - and eventually find that perfect recipe!
Below are the results of that analysis. All quantities are teaspoons, this is based off using 1 pound of ground pork:
Base Recipe:
1# Ground Pork
1.5 tsp crushed sage
1 tsp crushed thyme
1 tsp salt
2 tsp brown sugar
.75 tsp ground black pepper
.25 tsp red pepper flakes
.25 tsp nutmeg
.25 tsp cayenne pepper
Enhanced ingredients used in the video. These are in addition, to the base ingredients listed above:
.25 tsp coriander
3 tsp maple syrup
.5 tsp paprika
.5 tsp rosemary

How To Make Your Own Sausage
Anyone can make homemade sausage. I never realized how easy it was until I started doing it myself. It doesn't take to long, the ingredients are super cheap for what it yields, and it's delicious! In this guide we will be going over beginner basics, as well as three different kinds of sausage...Mild Italian, Bratwurst, and Merguez. Can't go wrong there.

BreakFast In A Lumpia Wrapper (Make It Your Way)
Breakfast Lumpia Rolls
50 individual lumpia wrappers
2 lbs. Jimmy Dean sausage
1 1b. hickory smoked bacon
1 sweet onion (Finely chopped)
4 red potatoes (small diced)
4 garlic cloves (minced)
8 eggs, large
1 lb. cheese, sharp, cheddar (shredded)
sea salt (to taste)
black pepper (to taste)
Directions:
1. Brown the ground sausage over medium heat until it’s slightly pink, drain the grease, then add potatoes. Continue to cook for about 3-4 minutes. Then add onion, garlic, salt, and black pepper. Mix and continue to cook for 3-4 minutes.
2. Turn off the heat and allow the mixture to completely chill before adding cheese.
3. Begin wrapping the breakfast lumpia, you may cook these right after you make them, or you can freeze them and prepare them as needed.
NOTE: If you freeze them, allow them to thaw before frying because they are bigger than your average lumpia.

Pork Breakfast Sausage Recipe
Pork Breakfast Sausage Recipe This is an updated version of an earlier breakfast sausage link recipe we did on the channel. The flavours stay pretty true to a traditional North American Breakfast Sausage links recipe. You can make breakfast links or breakfast sausage patties with this recipe, and your links can be fat or slender; your choice.
Ingredients:
2.25 Kg (5 pounds) pork shoulder
4g (15 mL / 1 Tbsp) ground sage
3g (15 mL / 1 Tbsp) dry thyme leaves
5g (15 mL / 1 Tbsp) dry rosemary leaves
15 mL (1 Tbsp) brown sugar, optional
33g (30 mL / 2 Tbsp) coarse salt
4g (10 mL / 2 tsp) crushed red pepper flakes
3g (5 mL / 1 tsp) freshly ground black pepper
3g (5 mL / 1 tsp) garlic powder
4g (5 mL / 1 tsp) paprika
Around 225 mL (15 Tbsp) ice water
Some ratios to bear in mind:
Around 3 Tbsp water per pound of meat
70% lean 30% fat
1.5% salt by weight of meat and fat.
