How To make Bohemian Beef Dinner
3/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 pounds beef stew meat
cut into 1" pcs.
2 Tablespoons cooking oil
2 medium onions :
chopped
1 clove garlic -- minced
1 teaspoon dill weed
1 teaspoon caraway seed
1 teaspoon paprika
1/2 cup water
1 cup sour cream
27 ounces sauerkraut
additional paprika
In a bowl or plastic bag, combine flour, salt and pepper. Add beef; dredge or shake to coat. In a Dutch oven, brown the beef, half at a time, in oil; drain. Add onions, garlic, dill, caraway, paprika and water. Cover and simmer for 2 hours or until meat is tender, stirring occasionally. Stir in sour cream; heat through but do not boil. Heat sauerkraut; drain and spoon onto a serving platter. Top with the beef mixture. Sprinkle with paprika.

pork neck - 1.3 kg (3 lb)
water - 2.5 l (0.65 gallon)
salt - 7 g (0.25 oz)
black peppercorns - 5 g (0.18 oz)
bay leaves - 4 pieces
onion skins - 120 g (4.23 oz)
TO BOIL 1 H
salt - 10 g (0.35 oz)
black pepper - 5 g (0.18 oz)
coriander - 5 g (0.18 oz)
granulated garlic - 10 g (0.35 oz)
sweet paprika - 8 g (0.29 oz)
TO SMOKE 30 minutes
for the salad:
white cabbage - 250 g (8.8 oz)
cucumber - 1 piece
green onion - 15 g (½ oz)
dill - 7 g (0.25 oz)
salt - 3 g (0.11 oz)
lemon juice - 10 ml (0.34 fl oz)
