How To make Beef 'N Barley Dinner
1 lb Lean ground beef
1/2 c Chopped green pepper
1/2 c Chopped onion
1 Garlic clove; minced
2 1/2 c Water
16 oz Canned tomatoes, chopped
-- (undrained) 6 oz Tomato paste
3/4 c Medium QUAKER Barley*
1 tb Sugar
1/2 ts Salt (optional)
In a 4-quart saucepan or Dutch oven, brown ground beef. Add green pepper, onion and garlic. Cook until onion is tender; drain. Add remaining ingredients. Bring to a boil. Reduce heat to low; cover. Simmer 45 to 50 minutes or until barley is tender, stirring occasionally.
Five 1-cup servings *NOTE: To use Quick QUAKER Barley, substitute 1 cup quick barley for medium barley. Prepare recipe as directed above except simmer 15 to 20 minutes or until barley is tender, stirring occasionally.

I also love using my ground beef ideas to put together here for easy recipes that can be made part of a nice and simple healthy dinner. This barley and beef recipe was so incredibly delicious that I would trade it over rice any day of the week, it just has much better texture and flavor. The fact that it is 20%+ fiber per serving is just amazing. For any one struggling with weight loss missing rice, this is a perfect grain to include in your dinner recipes or add to your dinner ideas or meal prep. Barley is also super budget friendly per serving comparable to rice or even cheaper in some places.

Beef Barley Stew Ingredients:
1 tbs Olive Oil
2 lbs Beef Chuck Roast, cut into 1 cubes
Kosher Salt
Freshly Ground Black Pepper
8 oz Mushrooms, cut into thin slices
8 Carrots, peeled and sliced diagonally into 1/2 pieces
6 Cloves Garlic, minced
4 Yellow Potatoes, peeled and cut into 1 cubes
1 Yellow Onion, chopped
6 cup Low Sodium Beef Broth
1 cup Dry Red Wine
1/4 cup Tomato Paste
1 can Diced Tomatoes
1 tbs Dijon Mustard
1 tsp Dried Thyme
3/4 cup Pearl Barley
1 Bay Leaf
Chopped Fresh Parsley

Back to basics in few easy steps.
RECIPE:
4 beef shanks
1/2 cup olive oil
3 sticks celery
2 med. onions
4 bay leaves
1 cups tomato sauce
1/2 cup barley
10 cups beef broth
4-5 cloves of garlic
fresh parsley
2 cups turnip
2 cups rutabaga
salt and pepper per taste
hot sauce per taste
