Cookies: 1/2 ts Baking soda
1/4 ts Salt
1 1/2 c Dark brown sugar
1 c Salted butter
2 lg Eggs
2 ts Vanilla extract
1 c Chopped walnuts
1 c Walnut halves
2 1/2 c All-purpose flour
Glaze: 8 oz Caramels
1/4 c Heavy cream
Cookies: preheat oven to 300. In medium bowl, using a whisk, mix together flour, soda and salt. Set aside. In large mixing bowl, using an electric mixer, beat together sugar and butter. Mix to form grainy paste. Scrape down sides of bowl when necessary. Add eggs and vanilla and beat on medium until soft and lumpy. Add flour mixture and chopped walnuts and mix on low just until combined. Do not overmix. Drip cookie dough by rounded tablespoon 2 inches apart on ungreased cookie sheet. Place 1 whole walnut half in center of each cookie. Bake 25 minutes or until cookies begin to turn brown at the edges. Transfer to a cool, flat surface. Glaze: melt caramels with cream in small saucepan over low heat and stir until smooth then remove from heat. Drizzle cooled cookies with glaze in interesting patterns. The Dessert Show 1/19/96 -----

Learn how to make Oatmeal Butterscotch Cookies! Time to throw it back to my childhood! These cookies are so delicious and butterscotchy - soft on the inside and crunchy on the edges they remind me of the ones my dad made for me as a kid. They're easy to make and I promise you won't be able to eat just one!
Oatmeal Scotchies Recipe
Makes about 40 cookies
1 1/4 c flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
3/4 c butter, softened
3/4 c brown sugar
3/4 c white sugar
2 eggs
1 tsp almond or vanilla extract
3 c Old-Fashioned oats
1.5 c Butterscotch chips
Preheat oven to 375.
Cream together both sugars and butter until smooth. Add in eggs and almond extract. Add in spices and all dry ingredients except oats and butterscotch chips. Mix together ingredients together until smooth and no lumps are seen. Stir in oats and chips.
Drop by rounded tablespoon fulls on a parchment lined baking sheet and press cookies down a bit. Bake at 375 for 9-11 minutes. Enjoy!

These cookies are filled with buttery richness stuffed inside a soft and chewy texture. It’s packed with robust butterscotch-ey goodness. This recipe is pretty simple to make. Takes about 10 minutes to prepare and no chilling needed. It’s egg-free too!
You’ll need:
• 2 cups all-purpose flour (spooned & leveled - *see notes below)
• ½ tsp baking soda
• 1 tsp baking powder
• ¼ tsp salt
• 2 tsp cornstarch
• ½ cup unsalted butter (melted & cooled)
• ½ cup light brown sugar (spooned & leveled - NOT PACKED)
• 2/3 cup condensed milk
• 1½ tsp vanilla extract
• 2/3 cup butterscotch chips/morsels + more for toppings
Makes 16 delicious cookies
* Using 2” cookie scoop in the video
:: HELPFUL HINTS ::
* Do not OVER BEAT the dough and OVER BAKE the cookies to prevent a dry and tough texture.
* Pull them out of the oven once they have flattened out and you see cracks on the surface. They may look undone in the center, but will firm up as they cool. Let cookies rest for 3-5 minutes in baking pan and transfer to wire rack to finish cooling completely.
* Measure your flour correctly (spoon & level method). Adding too much flour will result to dry and crumbly texture when baked. Fluff your flour with a spoon, spooned it into your measuring cup, and use the back of the knife to level the excess flour off.

BRANDON’S FAMOUS CHOCOLATE CHIP COOKIES
1 cup butter
1 1⁄4 cup brown sugar
1 cup white sugar
2 eggs
1 tsp. vanilla
1⁄2 tsp. almond extract
3 cups flour
1⁄2 tsp. salt
1 tsp. baking soda
1 1⁄2 cups chocolate chips – semi-sweet 1 cup butterscotch chips
1 cup chopped or sliced almonds
Cream butter, sugars, eggs, vanilla and almond extract in mixer at high speed. In a separate bowl, mix flour, salt and baking soda. Slowly combine dry ingredients with wet ingredients until thoroughly mixed. Add chocolate chips and nuts at low speed. Drop well rounded tablespoons of cookie dough onto cookie sheet lined with parchment paper, or lightly greased. Bake at 350 degrees for 8-10 minutes. Better to underbake than overbake as cookies continue to bake after out of oven and start to harden. Cool on racks. Makes 35 oversized cookies.
Notes: My son, Brandon, developed this recipe and we ALWAYS go back to it because they are simply the best chocolate chip cookies. On special occasions I have dipped a half cookie in chocolate. Also, you can make ice cream sandwiches by placing vanilla ice cream between the cookies, place plastic wrap around them, and freeze before serving. Rave reviews are coming your way now!
