How to make Beet Kvass - A Probiotic Rich Fermented Drink made of BeetRoot for Good Gut Health
Homemade Beet Kvass is a plant based fermented drink or tonic drink that filled with loads of good beneficial bacteria (probiotics), digestive enzymes, vitamins and many beneficial compounds.
It is famous for its cleansing and detox properties. This is an ancient digestive tonic. Vey refreshing and simple to make.
Probiotic bacteria naturally found on the beet skins undergoes lacto-fermentation.
All you need is some beetroots, salt & water.
INGREDIENTS:
1. Beetroot - 2 medium size/250gms
2. Water - around 700ml

⏰it’s time to start fermenting at home - its fun, easy, affordable, and a great way to add gut healthy probiotics to your day. That’s why I am starting this fun Fermentation Friday series!!
????I love having fermented tonics in the fridge to make a refreshing beverage with amazing gut health benefits.
Beet kvass is a traditional fermented originating from Eastern Europe.
????this is a simple facto-fermentation version - just using beets, salt and water. If you or your family makes it a different way, let me know! i love to learn traditional recipes.
????????since it’s fermented it has those great, naturally occurring probiotics that feed our gut bugs. Beets are also known to support liver health and this kvass has some key nutrients like B vitamins, vitamin C, and minerals.
here’s how I made mine:
- 375g organic beets (about 3-4 medium beets)
- 1.5 tbsp sea salt
- 7 cups water
1️⃣Wash your beet root but leave the skin on. Roughly chop into small cubes.
2️⃣Add the beets to a half-gallon glass vessel. Add in the water and salt and stir well until it is dissolved. If any of your beets are floating, you can use a fermentation weight to keep them submerged in liquid and avoid mold.
3️⃣Let it sit on your counter or cupboard. I let mine go for about a week, but taste as you go to see how you like the flavor.
4️⃣Then transfer it to the fridge. My favorite way to use the liquid is to add a few ounces to some sparkling water with lemon or lime juice. Its savory and refreshing and great for the gut.

BONUS TIPS:
1. Don't add lesser salt else fermentation won't start.
2. Make sure to use an Air-tight container else fungus will form and will spoil it.
3. Use either Sea salt or Himalayan pink salt for good fermentation.
4. best temperature for good fermentation is room temperature.
a. Hot / Normal weather at your place: Keep it on the kitchen counter
b. Winter (don't have an oven): Cover it with a comforter/blanket.
c. winter (have an oven): Keep it in the oven with its light on.
5. Release pressure from the jar (every 24 hours) by opening the lid, else it will be very difficult for you to open the lid (you might end up making a hole on the lid to open it)
6. When you see many bubbles on the top surface of kvass - INDICATES that fermentation has begun.
7. After 3 days when tasty changes to earthy, slightly salty, and subtly sour flavor then its ready to enjoy
8. Include this in your daily routine to get all the benefits.
