Bubbies beet horseradish is sweet, and tangy, and makes a delicious dressing for a fresh chopped salad!

Beets with horseradish condiment.
* Cook 5 pieces of beetroot until tender and peel them. After cooking is done. Make mix of 1/2 cup of vinegar, 1 1/2 cups of water, and add 1/3 teaspoon of salt and 2-3 tablespoons of honey in the bowl. Let the beetroot cool in the refrigerator.
* Place the cooled beets in a blender, add 2-3 tablespoons of honey, and finely chop everything.
* Add freshly grated horseradish according to your taste. Sprinkle a bit of salt and mix well.
* If the mixture is too thick, add the vinegar water mixture used before.
* Store in a glass container in the refrigerator.
* We can use this condiment with the meat or falafels.

Beet Horseradish
Here's a recipe that will add a pop of color to your Passover or Easter table, and clean your sinuses as you make it... trust me it will! What is it?
Beet horseradish.
At the Passover seder, serve horseradish on matzah or brisket. Symbolically, it's a reminder of the bitterness the Jews endured as slaves in Egypt.
In parts of Eastern and central Europe, beet horseradish is served as a condiment for lamb on Easter.
This recipe uses Our Wee Farm honey by @lorenzaponce to replace the small amount of sugar commonly used in making fresh horseradish.

Ingredients: Yield: 5 cups
1 Pound Horseradish root, peeled
2 Medium Raw beets, peeled
5 Tbsp Water, divided
1/4 Tsp Salt
3 Tbsp Lemon juice
1 Tbsp Honey
1. Trim ends of peeled horseradish root and beets. Cut root and beets in half.
2. Fit a food processor with a fine shredding disk*. Working in batches shred horseradish followed by the beets.
3. Transfer shredded horseradish root and beets to a medium bowl.
4. In a small bowl whisk together 3 tablespoons water, salt, lemon juice, and honey. Add to horseradish and beets. Stir until combined. Add 2 more tablespoons water and stir.
5. Fit food processor with chopping blade and working in batches return horseradish to food processor bowl. Pulse for 20 seconds.
6. Serve as a warm or cold condiment, although cold is more traditional.
7. Store in a jar or plastic container with a tight fitting lid. Keep in the refrigerator for up to 3 weeks.
* No food processor? Use a box grater to shred the horseradish root and beets.
