Muffin, so easy to make and if you are creative you can make variations with this simple plain muffin recipe. These are the ingredients that are currently available in my pantry. You can use any that you already have!

Ingredients
All Purpose Flour 300 grams
Baking Powder 1 tsp
Baking Soda 1 tsp
Salt 1/4 tsp
Sugar 170 grams
Eggs 2
Plain Yogurt 160 grams
Unsalted Butter 40 grams
Milk 80 grams
Oil 90 grams
Bake first in 210C pre-heated oven for 5 mins and then lower down the temperature to 170C bake for 15-20 mins.
Chocolate — cocoa powder, couverture chocolate chunks
Oreo — oreo cookies
Matcha — matcha powder, white chocolate chips, sweet cream cheese
Blueberry — fresh blueberries and almond
Strawberry — strawberry jam, sweet cream cheese, strawberry biscuits, sweet cream cheese
Carrot — grated carrot, walnut, nutmeg powder, cinnamon powder, sweet cream cheese

CINNAMON COFFEE CAKE MUFFINS
BAKING INSTRUCTIONS:
▪️ Bake in the oven at 350 degrees F for 9-12 minutes, or until a toothpick comes out clean.
▪️ Let your muffins cool for 5 minutes in the pan, before transferring to a cooling rack to cool for 10 minutes before adding icing drizzle.
INGREDIENTS:

▪️ 1 1/2 cups self-rising flour
▪️ 1/3 cup granulated sugar
▪️ 1 tsp cinnamon
▪️ 1/3 cup oil
▪️ 1 large egg
▪️ 1/2 cup milk (I used 2%)

Streusel Topping
▪️ 1/4 cup light brown sugar
▪️ 1 tsp cinnamon
▪️ 1/8 tsp salt
▪️ 2 tbsp unsalted butter, cold
▪️ 3 tbsp flour
Icing
▪️ 1/4 cup powdered sugar

This Basic Muffin Recipe is the starting point for perfect soft & fluffy bakery-style muffins.

MAKES 12 MUFFINS
Ingredients
4 Tablespoons unsalted butter melted 57g
1/4 cup canola oil 60ml (you may substitute vegetable oil)
1 cup sugar 200g
1 large egg room temperature
1 large egg white room temperature
1 1/2 teaspoons vanilla extract
1/2 cup buttermilk 120ml (click link for buttermilk substitute)
1 3/4 cup all-purpose flour 220g
2 teaspoons corn starch cornflour UK
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups of your favorite add-ins: Chocolate chips, frozen fruit, nuts, etc.
Additional sugar for sprinkling optional
Instructions

00:48 Combine the melted butter and canola oil in a large bowl and stir well. Add sugar and stir again to combine.
01:27 Add egg, egg white, and vanilla extract. Mix thoroughly until all ingredients are well-combined, then stir in buttermilk.
01:57 In a separate bowl, whisk together the flour, cornstarch, baking powder, and salt.
02:18 Using a spatula, gently fold the dry ingredients into the wet, taking care not to over-mix. Once the dry ingredients have been about half-way stirred into the wet, stir in add-ins (if using) and continue to fold in to batter until just combined.
03:30 Cover bowl with a dry towel and allow batter to rest for 15-60 minutes*
Preheat oven to 425F (215C) and line a 12-count muffin tin with paper liners.
04:00 Once oven has preheated, portion batter into prepared tin, filling each liner at least 3/4 of the way full.
04:33 If desired, sprinkle tops generously with sugar and transfer muffin tin to preheated oven.
04:50 Bake on 425F (215C) for 8 minutes and then, without opening the oven door, reduce the oven temperature to 350F (175C) and bake another 12 minutes, or until tops are just beginning to turn golden brown.

Notes
*This is optional, it helps give the muffin tops a higher rise but you can put them straight in the oven without waiting even 15 minutes and they'll still taste delicious. Ideally you would let the batter set at least one hour, but I found 15 minutes gives me a decent rise (the muffins in the photographs were allowed 15 minutes) while still not dragging out the process too much.

2 cup all-purpose flour
1 tsp baking powder

1. Start off by combining all of your dry ingredients in a bowl. Add 2 cups of all-purpose flour, 1 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt, then whisk it together.
2. Reserve about 1 tbsp of the flour mixture and mix it with 1 1/2 cups of blueberries. Then set it aside.
3. Now add 3 eggs into a large bowl and whisk them on high speed with an electric hand mixer. You want to whisk them for a few minutes until the eggs become pale and fluffy.
4. Then continue beating the eggs as you add in 1 cup of granulated sugar. Keep beating for about 3 more minutes. The key to super fluffy muffins is well-beaten eggs.
5. Now add 1 tsp vanilla extract and 1 tbsp lemon juice.
6. Beat the eggs on high speed again and this time slowly add in 3/4 cup heavy cream.
7. Now you can begin sifting in your dry ingredients. But don’t add it in all at once. You’ll want to add about 1/3 of the dry ingredients at a time with mixing in between.
8. Once you’ve got all your dry ingredients well Incorporated continue mixing as you add in 4 tbsp of unsalted melted butter.
9. Now add the blueberries to the blueberry muffin batter.
10. Fold the blueberries into the batter using a spatula. Now Line your muffin tin with cupcake liners and begin scooping the batter out using a large cookie scoop.
11. Make the streusel topping by combing 1 tbsp unsalted cold cubed butter, 2 tbsp all-purpose flour, Pinch of salt, 1 tsp cinnamon and 3 tbsp brown sugar in a small bowl.
12. Mash it all together using a fork until all the ingredients are well combined and they have a crumbly dry texture to them.
13. Now top the blueberry muffins with the streusel topping and bake them in the oven at 350 degrees Fahrenheit for about 35 minutes.
