Creamed Corn is a Southern Classic and there are a few tricks to making it well. Start by getting your hands on the freshest corn you can find. Then, make sure you not only use the kernels but the corn milk that’s hiding in the cob. We love this Norpro corn creamer - it does all the work for you! To use it, simply run your cobbs along the blade over a bowl to catch the kernels and the milk.
To make great creamed corn, you need time. Slowly cook the corn and corn milk over low heat to bring out all the flavor and natural starches. Cook it this way for about 30 minutes, then finish it with a little cream, butter and salt. Delicious.

When it comes to a side dish, this CORN CASSEROLE is on the top of my list of favorites. This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. This corn casserole is so easy to prepare and it’ll never let you down. I hope you give it a try. ❤️

INGREDIENTS _________________
1 stick of salted butter (melted)
1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.

Cream Corn From A Can
Ingredients I used:
½ cup green pepper, diced
½ cup yellow onion, diced
3 Tbsp evaporated milk
2 Tbsp butter or margarine
¼ cup sugar
15 oz can of whole kernel sweet corn, drained
15 oz can of cream style sweet corn
¼ tsp salt
¼ tsp garlic powder
Dash of pepper to taste
Preparations: (double or triple recipe if needed)
On medium heat in a skillet, add butter then melt. Once melted add bell peppers and yellow onion, then sauté for 2 minutes. Add cream style sweet corn and whole kernel sweet corn to skillet. Stir and blend well. Add salt, garlic and pepper, then stir. Next add evaporated milk and sugar, stir again. Cover with lid and cook for 25 minutes on low heat. Check in between to make sure corn is not sticking. Makes about 4 servings.

Homestyle Creamed Corn
Cream style corn from scratch...easy, quick and delicious! This tastes best with sweet corn right off the cob although you can use frozen corn as well if that's all you can get.
What you'll need:
8 ears sweet corn (or 2 cups frozen corn)
1 cup cream or half and half
2 Tbsp butter
2 Tbsp sugar
salt and pepper to taste
1 cup milk
1 Tbsp corn starch or flou
1/4 cup Parmesan cheese
Cut the kernels off the ears of corn, slicing just the top half of the kernels off. Using the back of your knife, scrape the ears to get the remaining juice out of the ears. Put into a medium sauce pan and add cream or half and half, butter, sugar and salt and pepper. Bring to a boil over medium-high heat. Cook for 4-5 minutes. Mix corn starch into the milk until dissolved and then add to corn mixture. Bring back to a boil and take off heat. Stir in Parmesan cheese. Let sit for 5 minutes before serving. Makes 6-8 servings. Enjoy!

In this episode of Vinnie's Vittles we cook one of Vinnie's most favorite dishes from a BBQ joint in Texas, Rudy's Cream Corn. This Cream Corn is sooooo good and I know you guys will love it.
Rudy's Cream Corn
Ingredients:
2 8oz Blocks of Cream Cheese
4 lbs frozen sweet whole kernel corn
1 cup heavy whipping cream
1 stick of salted butter
4 tablespoons of sugar
1 teaspoon of black pepper
1/2 teaspoon of salt
Directions:
1)Cut cream cheese into 1 inch cubes, cut stick of butter into 1inch cubes.
2)Combine all ingredients into crockpot. Place corn, then add cubed butter and cream cheese, then add sugar, salt and pepper. Lastly pour heavy whipping cream over the top
3)Heat on low for 4 hours, stirring occasionally as butter and cream cheese melts. Don’t short curt and cook too fast. The 4 hours let all the ingredients combine and create the great flavor we all want.
