1 c Sugar
1/3 c Water
1/2 Lemon (juice only)
1/2 lb Unsalted butter
1/3 c Blanched almonds
1/2 c Yogurt
3/4 c Sugar
1 c Semolina
1 ts Baking powder
Few drops vanilla extract Whipped cream Make a thick syrup by boiling the sugar, water and lemon juice together and simmering until it thickens. Allow to cool and chill. Melt half of the unsalted butter. Toast the blanched almonds and chop them finely. Beat the yogurt with the sugar in a large mixing bowl. Add melted butter and all remaining ingredients except the cream, and beat well until thoroughly mixed. Pour into a large rectangular buttered baking tray and bake in a 400 degree oven for 30 min. Pour the cold syrup immediately over the hot basbousa as soon as it comes out of the oven. Cut into lozenge shapes and return to the oven for 3 more minutes. How to make Basbousa (Egyptian)
Ingredients
2 ½ cups - coarse semolina
1 cup - desiccated coconut
220 g (1 cup) - caster sugar
75 g (½ cup) - self-raising flour
200 g - thick yoghurt
200 g - unsalted butter, melted
1 tsp - vanilla extract
25–30 - blanched almonds
milk if needed
Syrup
330 g (1 ½ cups) - sugar
250 ml - water
1 tsp - lemon juice
1 tsp - rosewater
Preparation
Preheat the oven to 190°C. Mix the semolina, coconut, sugar, flour, yoghurt, melted butter and vanilla in a bowl. If the mixture seems too thick, add a little milk – but it should still be fairly stiff. Spread the mixture with your hands in a buttered 30 x 25 x 5 cm baking tray. Cut it into diamond shapes, pressing hard. Place an almond in the centre of each diamond. Bake for 35–40 minutes until golden brown.
Meanwhile, make the syrup. Place the sugar and water in a saucepan and bring to the boil, stirring until the sugar dissolves. Simmer for 5 minutes without stirring. Stir in the lemon juice and rosewater and remove from the heat. Leave to cool.
Pour the syrup over the cake while the cake is still hot. Cool to serve.

Basbousa is a traditional Middle Eastern sweet cake that originated in Egypt, although it is also popular in other countries. It is made from a semolina batter and cooked in a pan, then sweetened with orange flower water, rose water or simple syrup, and typically cut into diamond shapes.
Instructions :
Combine 3 cups semolina , 1 can thick cream ,6 tbsp plain yoghurt,2 tsp baking powder, 1/2 cup cooking oil , 2 tbsp shredded coconut , 1-1/2 cup sugar 1/2 cup powdered milk , mix well .
Pour into baking
dish , Cut a diamond or square design in the cake with a butter knife. Place an almond or any other type of nut you have on hand onto each pre-cut square.
Bake at 400 degrees for 30 min to 40 mins until it's a bronze brown color. If no color forms on the top turn on broiler for 1-2 minutes until the top is golden/bronze. Cut the Cake again along the pre-cut lines and pour cold syrup on top while its hot so it can absorb all through.
Syrup:
In a sauce pan Combine 1-1/2 sugar , 1 cup water on high heat until it boils . Boil for 10 minutes.
Let it cool.
Add syrup on the top of basbousah.
