Banana bread with spice cake #bananabread
Spiced banana cake bread
3 overripe bananas
1 box spice cake mix (or use yellow)
1/2 cup (1 stick) melted, unsalted butter
2 eggs
1 tsp vanilla extract
1/2 tsp salt
1/2 cup mini chocolate chips or chopped walnuts (optional)
Preheat oven to 350°
Mash bananas in a bowl
Then the melted butter, eggs, vanilla and salt. Mix together with a hand mixer. Add cake mix and mix well. Fold in chocolate chips
Pour into a greased or parchment lined loaf pan and bake at 350° for 45 minutes.
if it starts browning too fast on top after 30 minutes cooking, cover it with foil for the
rest of the baking time
Let cool 10 minutes before slicing

The softest BANANA BREAD recipe I've ever had. Moist banana loaf
RECIPE:

If you’re looking for a banana bread recipe that is super moist and bursting with banana flavour, then this recipe is it! It comes together so easily, and is finished off with an optional topping of walnuts that add great crunch and texture to the banana loaf – so so good!
INGREDIENTS:
For accuracy, I would recommend using the gram measurements provided as those are the exact quantities I use. Cup measurements are given as estimates (based on US cup measurements) to make it easier for those who do not have a scale.
▢1½ cups (339 g) mashed bananas - about 3 large bananas, must be ripe bananas (the riper the better!)
▢1⅔ cups (200 g) all purpose flour
▢2 tbsp (16 g) cornstarch - also known as cornflour in some countries
▢1 tsp baking powder
▢¾ tsp baking soda
▢½ tsp salt - omit if using salted butter
▢¾ tsp ground cinnamon
▢¾ cup (150 g) soft brown sugar
▢¼ cup (56 g) unsalted butter - room temperature
▢¼ cup (52 g) unflavoured vegetable oil - I use canola oil
▢1½ tsp vanilla essence/extract
▢1 large egg - room temperature, size 7 egg
▢¼ cup walnuts - you can add more or less
Bake at 160 °C (320°F) with the fan on (convection mode) for 1 hour, or until a skewer or knife comes out clean. If you don't have a fan function, increase the temp to 175°C (347°F).

Directions for my Banana Spice Bread
1 Spice Cake Mix
2 Eggs
3 Ripe Bananas
1 tsp vanilla (optional)
Mix eggs and bananas, add dry mix and mix until all moist (by hand or by mixer). Pour into greased 9.13 cake pan. Bake in preheated 350 degree oven for 30 minutes.
Tip: You could add 1/4 cup oil if you want it more moist. You can make a glaze with confectioner's sugar and a tiny bit of milk to drizzle on top or just add butter and eat like a muffin!!! My mother had hers with wipped topping! So good!!! You can also add walnuts to the mix. And don't be afraid to try other flavors of dry mix! Pineapple, orange, strawberry, would all be delish with bananas!

2 CUPS SIFTED CAKE FLOUR OR ALL PURPOSE
2 1/2 TSP DOUBLE-ACTING BAKING POWDER
1 TSP SALT
1 TSP CINNAMON

1/2 TSP CLOVES
1/2 TSP NUTMEG
3/4 CUP SUGAR
ADD…
1/2 CUP FIRMLY PACKED BROWN SUGAR
1/2 CUP SHORTENING
1/2 CUP MILK
BEAT…
FOR 2 MIN. UNTIL BATTER IS WELL-BLENDED AND GLOSSY.
(IF ELECTRIC MIXER IS USED, BEAT AT LOW TO MED. SPEED FOR SAME PERIOD OF TIME.
ADD…
1/4 CU MILK
2 EGGS, UNBEATEN
1 TSP VANILLA
BEAT…
FOR 2 MIN.
POUR…
INTO TWO, LIGHTLY GREASED, FLOURED, 8 LAYER CAKE PANS.
BAKE…
IN MODERATE OVEN (350*f) FOR 30 TO 35 MIN.
*WITH BUTTER, MARGARINE OR LARD, DECREASE TOTAL AMOUNT OF MILK 2 TBSP.
BANANA FROSTING
MIX TOGETHER 1/2 CUP MASHED, RIPE BANANA (1 LARGE BANANA), AND 1/2 TSP. LEMON JUICE.
CRAM 4 TBSP. BUTTER (HALF SHORTENING MAY BE USED). ADD 4 CUPS SIFTED CONFECTIONERS' SUGAR AND BANANA ALTERNATELY TO BUTTER; BLEND WELL AFTER EACH ADDITION. ADD 2 DROPS RED COLORING (OPTIONAL) AND BEAT UNTIL SMOOTH. SPREAD ON COOLED LAYERS OF CAKE.
