How To make Banana Cinnamon Doughnuts
3 cups peanut oil -- for frying
4 cups all-purpose flour
3/4 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup margarine
1 cup bananas
mashed
2 large eggs :
beaten
Topping: :
3/4 cup sugar
2 teaspoons ground cinnamon
1. Heat oil in a deep-fat fryer or deep heavy skillet.
Time heating so it will be ready when you are prepared to begin frying doughnuts. Use Canola oil if you prefer, but peanut oil has a higher smoking point and is a good choice for frying. 2. In a large bowl, combine flour, sugar, baking
powder, salt, cinnamon, and nutmeg. Cut in margarine using a pastry blender or two knives. 3. Make a well in center of mix and add mashed bananas
and eggs. Mix well. You can do this with a wooden spoon, or since dough will be very stiff you may want to use your hands to mix it well. 4. Place dough on a lightly floured surface and roll to
1/2-inch thick. Cut with a 2-1/2 inch doughnut cutter that you dip in flour as needed. 5. Deep-fry, a few at a time, until golden brown. Drain
on brown paper bags. Fry the doughnut "holes" also. 6. Combine sugar and cinnamon in a paper bag or place
on a shallow plate. Coat warm doughnuts with this mixture.

Amazing soft baked banana and cinnamon doughnuts that you just can´t stop eating!
THE RECIPE:
Banana-cinnamon doughnuts
(makes 12 regular size doughnuts)
Ingredients
250g of flour
150g sugar
2tsp baking powder
pinch of salt
1tsp cinnamon (optional)
1 ripe banana
2 medium eggs
120ml kefir
2tbsp melted butter
For decoration
5tsp sugar
½tsp cinnamon
1tbsp melted butter
Start with pealing the banana and mashing it in a small bowl so that there are no pieces left.
Sift the flour and baking powder together and add with the rest of the dry ingredients to a large bowl. Then beat eggs lightly with a whisk in a separate bowl. Add banana, kefir and melted butter and mix. Pour the egg mixture into dry ingredients and mix well until incorporated.
Pipe the batter into oven doughnut tray/pan filling up to 2/3 full. Bake the doughnuts in 220 C bottom top heat at the middle shelf for about 10-12 minutes or until the doughnuts start to golden slightly. Let the doughnuts cool slightly before removing them from the pan.
Once doughnuts have completely cooled you can start making the mix for decoration. Mix sugar with cinnamon. Brush doughnuts lightly with melted butter and then sprinkle with sugar and cinnamon mix.
Enjoy fresh on the same day or store in an airtight container to preserve most of the moist in the doughnuts.

Ingredients
Baking spray with flour, such as Baker's Joy
2 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 extra-large egg, lightly beaten
1 1/4 cups whole milk
2 tablespoons unsalted butter, melted
2 teaspoons pure vanilla extract
For the topping:
8 tablespoons (1 stick) unsalted butter
1/2 cup sugar
1/2 teaspoon ground cinnamon
Directions
Preheat the oven to 350 degrees. Spray 2 doughnut pans well.
Into a large bowl, sift together the flour, sugar, baking powder, cinnamon, nutmeg, and salt. In a small bowl, whisk together the egg, milk, melted butter, and vanilla. Stir the wet mixture into the dry ingredients until just combined.
Spoon the batter into the baking pans, filling each one a little more than three-quarters full. Bake for 17 minutes, until a toothpick comes out clean. Allow to cool for 5 minutes, then tap the doughnuts out onto a sheet pan.
For the topping, melt the 8 tablespoons of butter in an 8-inch saute pan. Combine the sugar and cinnamon in a small bowl. Dip each doughnut first in the butter and then in the cinnamon sugar, either on one side or both sides.

For the cookie:
115g unsalted butter, melted and cooled
70g light brown sugar
70g granulated sugar
1 large egg
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp bicarbonate of soda
1/2 tsp baking powder
215g plain flour
15g cornflour
1 tsp cinnamon
For the icing:
90g butter, softened
90g Cream cheese, room temperature
250g icing sugar
1 tsp vanilla extract
1 tsp cinnamon
Bake 160C 8 mins - allow to cool fully before icing
Makes 16 cookies
