How To make Bacon Cheese Muffins
1/2 lb Bacon
Veg oil 1 Egg, beaten
3/4 c Milk
1 3/4 c All-purpose flour
1/4 c Sugar
1/2 c Crunchy, nugget cereal
1 c Hredded cheddar cheese C
Cook bacon- drain but reserve dripping, if necessary add veg oil to measure 1/3 c total. In a small bowl combine dripping/oil, egg and milk- set
aside. Crumble bacon, set aside. In a large bowl, combine dry ingredients, make a well in center. Add wet mixture all at once; stir just til moistened. Batter will be lumpy, stir in cheese, bacon & cereal. Fill greased or lined muffin cups 3/4 full. Bake at 400 for 15-20 min. Makes 12.

INGREDIENTS
1 cup all purpose flour
1 cup yellow cornmeal
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup white sugar
8 tbsp butter, melted
1-1/2 cups buttermilk
2 eggs
6 oz (1-1/2 cups) sharp cheddar cheese, grated
6-8 slices of bacon, cooked until crispy
1/3 cup green onion, chopped
INSTRUCTIONS
1. Preheat oven to 400 F/200 C. Prepare muffins pan with muffins liners. Set aside.
2. In a large bowl, mix together flour, cornmeal, baking powder, baking soda, salt, and sugar. Set aside.
3. Whisk together melted butter, buttermilk and eggs. Add this mixture to the flour mixture and whisk until well combined.
4. Add cheese, crispy bacon, and green onions and fold everything together. Fill each muffin with batter almost all the way up. If using jumbo muffin pan bake for 23-25 minutes, if using regular muffin pan, bake for 13-15 minutes.
5. Once they are done, allow to cool a little then enjoy.

You will Need
1 cup of All Purpose / Plain Flour
2 tablespoons of Sugar
1/2 a tablespoon of Baking Powder
1/4 a teaspoon of Salt
1 large Egg
1/2 a cup of Buttermilk or Yogurt
2 tablespoons of Melted Butter
2 Strips of Crispy Bacon
1/2 a cup of Cheddar Cheese
1 Spring / Green Onion
1 Hard Boiled Egg
Extra Cheese for the Top
Oven Temperature 375F / 190C for 25-30 minutes

Bacon & Cheese Egg Muffins
An easy make ahead breakfast recipe that is also freezer friendly. Make these egg muffins and keep in the fridge for a fast breakfast on the run or a high protein snack!
Full Egg Muffin Recipe:
INGREDIENTS
6 eggs
1/4 cup milk
1 cup shredded Mexican cheese
6 pieces of bacon, cooked and crumbled
INSTRUCTIONS
Preheat oven to 350 degrees F. Spray a muffin pan liberally with nonstick spray.
In a medium bowl combine eggs and milk and whisk until blended. Stir in bacon and cheese.
Use a ladle to fill each muffin cup. Bake 25 minutes or until centers are set. Eat immediately or allow to cook then store in refrigerator up to 4 days or freeze.
