How To make Artichoke Quiche
1 9-inch pie crust 1 6-oz jar marinated artichoke hearts, drained and coarsely chopped 4 oz bacon, chopped into bits (optional) 1 small onion, chopped 1 bunch scallions, chopped 2 cloves garlic, minced 1 red pepper, cut into 1-inch long, thin strips 1/4 cup chopped fresh parsley 3 TB chopped fresh basil 1 cup shredded Swiss cheese 1/2 cup Parmesan cheese 3 large eggs 1 TB dijon mustard 1/4 cup heavy cream 1/2 cup light cream 1/4 teas nutmeg salt and pepper
Line 9-inch quiche dish or pie plate with crust. Refrigerate. Saute bacon in large skillet over medium-high heat until browned. Reduce heat to medium and add onion, scallions, garlic and pepper. Cook until vegetables are softened, for about 10 minutes. Add artichoke hearts. Cook another 3 minutes. Remove from heat and add parsley, basil, salt, and pepper. Preheat oven to 375. Sprinkle Swiss and Parmesan cheese over crust. Top with artichoke mixture. Whisk together eggs, mustard, heavy and light creams. Season with nutmeg. Pour evenly over artichoke minute in crust. Bake until puffed and set, about 45 minutes. Serve warm or at room temperature.

6 Oz Jar Marinated Artichokes
1 Medium Onion, Chopped
3 Cloves Garlic, Minced
8 Eggs, Slightly Beaten
1 Cup Swiss Cheese, Shredded
1 Cup Cheddar Cheese, Shredded
1 Cup Parmesan Cheese, Grated
1/4 Cup Parsley, Chopped
1/2 TSP Pepper
1/2 TSP Italian Seasoning (or Basil)
1/2 TSP Worcestershire
Tabasco, to taste
1/2 Cup Breadcrumbs
Set oven to 350. Drain marinade from artichokes , set artichokes aside. In a large pan saute onions and garlic in marinade until soft. In a blender or food processor, blend eggs, artichokes, all cheeses, parsley pepper, worcestershire, tabasco, italian seasoning . Mix in bowl with onions and bread crumbs. Spoon mixture into well greased mini muffin tins or a 9x13 baking pan. Bake mini muffins 12-15 minutes or 9x13 25 minutes until knife or toothpick comes out clean.

Artichokes Quiche with Roasted Peppers
Want to add artichoke to your repertoire of quiches? It's a snap with this simple but tasty artichoke quiche with roasted red peppers recipe. This takes about 30 minutes to bake and is the perfect dish for brunch, special occasions, or even a quick dinner.

Makes one 9-inch quiche
Quiche crust / Pâte Brisée
▢1 ½ cup (190 g) All-purpose flour
▢½ teaspoon Salt
▢4 oz (113 g) Unsalted butter (chilled and cut into cubes)
▢1 large Egg yolk
▢2 tablespoon Water
Quiche filling
▢8 - 10 Artichoke hearts (fresh, frozen, or canned - sliced )
▢2 large Red peppers (roasted)
▢2 tablespoon Olive oil
▢2 large Sauteed onions (optional )
▢½ cup (60 g) Ricotta cheese
▢½ small Garlic (finely minced)
▢½ cup Italian seasoning (or finely chopped fresh parsley)
▢½ cup (60 g) Cheddar cheese
▢½ cup (120 g) Gruyere or Gouda cheese
Custard
▢3 large Eggs
▢2 tablespoon All-purpose flour
▢½ cup (60 g) Ricotta cheese
▢½ cup (120 ml) Heavy cream (or half/half)
▢½ cup (120 ml) Whole milk
▢¼ teaspoon Kosher salt
▢¼ teaspoon Black pepper
Preheat the oven to 400°F/ 200°C/ Gas Mark 6
Reduce the oven temperature to 375°F/190°C/Gas Mark 5
Bake quiche for 35 to 45 minutes
