How To make Apricot Chicken Bake

chicken breast halves

apricot nectar
1/2
teaspoon
ground allspice
1/8
teaspoon
ground ginger
1/4
teaspoon
black pepper, fresh ground
1/4
teaspoon
salt
1/3

apricot preserves
3
tablespoon
pecans, toasted
Directions:
Have the chicken breasts skinned and boned. Place the chicken in an oven-proof pan large enough that the chicken will not be overlapping.
Combine the next 5 ingredients and pour over the chicken, turning the chicken to get the marinade over all parts. Cover tightly and refrigerate overnight or at least 8 hours.
Remove from refrigerator and let stand for 30 minutes. Cover tightly with foil and bake in preheated 350 degree oven for 30 minutes. Uncover, drain and discard liquid from chicken, and keep warm.
Heat apricot preserves and brush over chicken. Bake, uncovered, 20-30 minutes longer, basting with preserves another 2 times. Remove to serving platter and sprinkle with toasted pecans.

EASY DINNER IDEA-APRICOT CHICKEN!
*Hello everyone! Today I am sharing one of my go-to dinner meals. It's a quick and easy chicken dish that I love to serve with rice and broccoli. It's a big hit in my family and I hope that you try it for your family too!
RECIPE! (The original recipe was taken from the Keeping Up Cookbook. I like to double the sauce amount so recipe is already doubled for you.)
4 boneless, skinless chicken breasts
1 cup apricot jam
3 tablespoons lite soy sauce
2 tablespoons mustard
2 tablespoons butter
Heat oven to 400 degrees. Spray glass 9x13 pan. Pat chicken breasts dry and season with salt and pepper. Bake for 10 mins.
Meanwhile, stir together the rest of the ingredients on the stove. Cook until butter is melted. Pour on top of baked chicken. Place back into the oven for another 10-15 mins. or until chicken is cooked all the way through.
Serve with whatever sides you like! I love the chicken flavored Rice-A-Roni and the roasted broccoli.

INGREDIENTS
- 4 skin-on, bone-in chicken thighs
- 2 tsp salt separated
- 1 1/2 tsp pepper separated
- 1 cup sliced leek
- 1/2 lb apricots
- 1/4 cup chopped sage
- 2 tbsp rosemary
- 1 cup orzo
- 2 tbsp orange juice
- 2 cups chicken stock
INSTRUCTIONS
Preheat oven to 375°F.
In a 10- or 12-inch cast-iron (or oven-ready) skillet, heat 1 tbsp olive oil over medium. Sprinkle the chicken thighs with 1 tsp salt and 1 tsp pepper on all sides.
Once the oil is hot, add the chicken, skin side down. Sear until the chicken skin is deep golden brown and releases from the skillet easily, 6-8 minutes. Remove from the skillet and set aside.
In the same skillet, add prepared leeks. Sauté until soft and just beginning to turn golden, 5-7 minutes.
Remove the skillet from the heat and add orzo, apricots, rosemary, and sage. Stir to combine and add the orange juice and chicken stock. Nestle the chicken thighs skin side up. Add 1 tsp salt and 1/2 tsp pepper.
Bake in preheated oven until the orzo is tender and the chicken thighs reach 160°F, 30-40 minutes. Remove from oven and allow to rest 10 minutes before serving.

Ingredients:
* 3 lbs. Chicken (any cut)
* 1/4 cup Melted Butter
* 1/2 cup Apricot Preserves
* 1/4 cup Mustard
* 1 tbsp. Honey
* 1/2 tsp. Cayenne Pepper (optional)
* Salt/Pepper (to taste)
Instructions:
1. Preheat oven to 400º F.
2. In a small bowl, combine butter and preserves until smooth. Heat in the microwave if needed to soften the preserves.
3. Add honey, mustard, and optional cayenne and whisk together.
4. Add chicken to 13 x 9-inch baking dish and season liberally with salt and pepper.
5. Pour sauce over chicken. If desired, reserve some sauce for brushing after cooking.
6. Cover and bake for 45 minutes or until chicken is thoroughly cooked.
