Today Franco debones a Chicken thigh and Leg and uses his meat in a way that you probably won't have seen before. Mixed with stuffing, wrapped in bacon with an APRICOT on top the chicken potter parcel is a treat for the eyes as well as the belly.

Chicken breast that don’t suck. ????
Chicken with apricot stuffing
Ingredients: Chicken breast 2 bacon medallions flattened
Stuffing: 1 Warburtons thin half pink onion tsp garlic, thyme fresh red chilli 5 apricots drained of juice
Flatten chicken and medallions and set aside
Place the stuffing ingredients into processor and blitz
Pop stuffing into the flattened chicken roll into shape and secure closed with the bacon
Cover with foil fake approx 20 mins 180 take off foil and bake a further 10 to crips up the outer
