Easy Cinnamon Spiced Muffins with Applesauce | Gluten-Free & Vegan Options
Ultra fluffy, super soft, and full of cinnamon spice – these Applesauce Muffins are made without oil or butter making them healthy enough to eat for breakfast! You’ll taste the flavors of Fall with every bite of this spiced muffin recipe. They’re also super adaptable and can easily be made gluten-free, vegetarian, and even vegan.

INGREDIENTS
2 cups flour gluten-free 1-to-1 blend
½ cup coconut sugar
1 ½ tsp. baking soda
1 - 1 ½ tsp. apple pie spice to taste*
½ tsp. salt
1 cup applesauce unsweetened
⅓ cup pure maple syrup
2 eggs room temperature
1 tsp. vanilla
1 Tbsp. sugar optional
⅛ tsp. cinnamon optional
INSTRUCTIONS
Preheat oven to 350 °F.
Mix together flour, coconut sugar, baking soda, apple pie spice, and salt in a medium-sized bowl.
Whisk together applesauce, maple syrup, eggs, and vanilla in a separate large bowl.
Add dry ingredients to wet ingredients. Mix by hand until just combined.
Place muffin cup liners into 12 cavities of a regular-sized muffin tray. Spray each liner with non-stick cooking spray.
Evenly distribute the muffin batter into all 12 cups. They should end up being about ¾ full.
Whisk together cinnamon and sugar in a small bowl and sprinkle ¼ teaspoon over each of the muffins.
Bake muffins in preheated oven for 22-25 minutes, or until a toothpick when inserted in comes out clean.
Let cool to room temperature before serving. Enjoy!
RECIPE NOTES
Make your own Apple Pie Spice or substitute with 1 teaspoon cinnamon and ½ teaspoon nutmeg.
Use flax eggs or chia seed eggs if vegan or dairy-free.

Applesauce Cake cupcakes | Apple Spice Cake from Scratch recipe. My Applesauce cupcake - aka Apple Spice Cake -- is rich in spices and flavor. Along with the Brown Sugar Icing - aka Boiled Icing -- these are perfect. Double the recipes for a three-layer tall cake. Both are 100 years old debuting at the beginning of last century.

Cupcakes
Ingredients:
1/2 c (113 g) unsalted butter
1 c (200 g) sugar
1 egg
1 1/3 c applesauce
1 c raisins or dried figs
2 c (300 g) cake flour
1 tso Cloves
1 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Allspice
1/2 tso kosher salt
1 tso baking soda
1/2 tsp baking powder
Directions:
1. Preheat oven to 350 F. Line cupcake pans with paper.
2. Sift together all dry ingredients: Cake flour, cloves, cinnamon, nutmeg, allapice, kosher salt, baking soda and baking powder.
3. Cream butter and sugar for 5 minutes in a mixer until light and fluffy. Combine in the egg.
4. Alternate in the wet and dry ingredients. Then fold in the figgs or raisins.
5. Pour into the cupcake liners to 2/3 -3/4 full depending if you want the dome on top.
6. Bake for 2-25 minutes or until a toothpick comes out clean.
Boiled Icing:
Ingredients:
2 1/2 c (320 g) brown sugar
3/4 c water
1 tsp vanilla extract
3 egg whites
1. Whisk egg whites to stiff peaks. At the same time in a heavy-bottom saucepan, bring the brown sugar and water to 236-240 f.
2. While the mixer is on high speed, carefully drizzle in the sugar syrup. Continue to whisk on high until stiff peaks, which takes about 10 minutes.
3. Add in vanilla extract.

You just need 1 1/4 cup oat flour, 1 cup apple sauce, healthy teaspoon of cinnamon, teaspoon of vanilla extract, teaspoon of baking soda, 1/4 teaspoon baking powder, 2 tablespoons maple syrup, and 2 tablespoons almond milk.
