Apple Pie Bars

Ingredients
For the crust:
1 pound (4 sticks) unsalted butter, at room temperature
3/4 cup granulated sugar
1/2 cup light brown sugar, lightly packed
2 teaspoons pure vanilla extract
4 cups all-purpose flour
1 1/2 teaspoons kosher salt
1/2 cup chopped walnuts
1 teaspoon ground cinnamon
For the apple filling:
1 1/2 pounds Granny Smith apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
1 1/2 pounds Golden Delicious apples, peeled, quartered, cored, and sliced 1/8 inch thick (3 large)
2 tablespoons freshly squeezed lemon juice
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
4 tablespoons (1/2 stick) unsalted butter
Directions
Preheat the oven to 375 degrees.
For the crust, place the butter, granulated sugar, brown sugar, and vanilla in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 2 minutes, until light and creamy. Sift the flour and salt together and, with the mixer on low, slowly add to the butter-sugar mixture, beating until combined. Scatter two-thirds of the dough in clumps in a 9 x 13-inch baking pan and press it lightly with floured hands on the bottom and 1/2 inch up the sides. Refrigerate for 20 minutes. Bake for 18 to 20 minutes, until the crust is golden brown, and set aside to cool.
Meanwhile, put the mixing bowl with the remaining dough back on the mixer, add the walnuts and cinnamon, and mix on low speed to combine. Set aside.
Reduce the oven to 350 degrees.
For the filling, combine the Granny Smith and Golden Delicious apples and lemon juice in a very large bowl. Add the granulated sugar, cinnamon, and nutmeg and mix well. Melt the butter in a large (10-inch-diameter) pot, add the apples, and simmer over medium to medium-low heat, stirring often, for 12 to 15 minutes, until the apples are tender and the liquid has mostly evaporated. Spread the apples evenly over the crust, leaving a 1/2-inch border.
Pinch medium pieces of the remaining dough with your fingers and drop them evenly on top of the apples (they will not be covered). Bake for 25 to 30 minutes, until the topping is browned. Cool completely and cut into bars.

Ingredients:
For the crust:
2¾ cups (250g) Rolled oats
1¾ cups (220g) Flour
3/4 cup (150g) Brown sugar
1/2 cup (100g) White sugar
1 teaspoon Cinnamon
1/2 teaspoon Salt
1 cup (230g) Butter, cold
For the filling:
5 apples
2 tablespoons (15g) flour
2-3 tablespoons sugar
1 teaspoon cinnamon
Directions:
1. Preheat oven to 350F (175C).
2. Make the crust: in a large bowl, mix oats, flour, brown sugar, white sugar, cinnamon and salt. Add cold, cubed butter and mix with your hands until crumbly. Reserve two cups of the mixture in the fridge for a later use.
3. Press the remaining crust mixture into a baking pan (13*9 inch). Press firmly.
4. Bake the crust for 15 minutes, then set aside.
5. Make the filling: peel the apples, then thinly slice. Arrange apple slices in a row on the cooled crust.
6. Sprinkle the apples with flour, sugar and cinnamon. Then, crumble the reserved crust mixture.
7. Bake for 35 minutes, until the crust is golden brown and the apples are tender.
8. Allow to cool, then cut into bars.
Notes:
• In the video you can see I’ve arranged apple slices in one row, but after trying it, I think it’s not enough, try layering two layers or more (5 apples should be enough).

APPLE STREUSEL CHEESECAKE BARS DAN SAUS KARAMEL
Saya nggak tau pasti siapa yang bikin resep ini (walaupun dari hasil browsing sih katanya Paula Deen), tapi yang pasti, dia jenius ???? perpaduan apel, cream cheese, kayu manis dan karamel itu ternyata enaaak banget. Apalagi ditambah streusel jadi ada tekstur creamy dari cheesecakenya dan crunchy dari streuselnya. Rame deh pokonya di lidah. Resep ini saya ambil dan ubah2 dikit dari resepnya Paula Deen dan beberapa blogger yang nge-rebake. Saya bikin 1/2 resep aja karena ukuran loyangnya pun cuma 20 cm. Buat yang suka cheesecakenya lebih tebal, bisa dikali dua yah. Kalo yang saya mah tipis, malah lebih tebelan apelnya ???? jadi lebih dominan rasa apelnya. sesuaiin ama selera aja oceee.
RESEP APPLE STREUSEL CHEESECAKE BARS DENGAN SAUS KARAMEL
Untuk : 1 loyang 20x20cm
Bahan-bahan :
KULIT PASTRY
85g mentega
100g tepung protein sedang
30g brown sugar
30g gula pasir
TOPPING STREUSEL
45g brown sugar
45g gula pasir
65g tepung protein sedang
1/8 sdt garam
20g quick cooking oats
55g mentega
ISIAN CHEESECAKE
225g cream cheese
50g gula pasir
1/4 sdt pasta vanilla
1 telur
ISIAN APEL
2 apel hijau
1/2 sdt kayu manis bubuk
1 sdm gula pasir
SAUS KARAMEL
Untuk : 300ml (1 1/4cups)
200g gula pasir
60ml air
180ml krim kental/whipping cream
1/2 sdt pasta vanilla
1/8 sdt garam

I don't know for sure who made this recipe at first (although when I've browse about it, it said that this is Paula Deen's recipe), but certainly, she is genius ???? the combination of the apples, cream cheese, cinnamon and caramel was really goodddd. Moreover, there is a Streusel in this bars so there's a creamy texture from the cheesecake and the crunchiness from the streusel. It's like party in your mouth. I took this recipe and change it a little bit from the Paula Deen's recipe and some bloggers who rebake it. I just made a 1/2 of a recipe because the size of the pan was only 8inch. If you like a thicker cheesecakes, you can double the cheesecake filling. My cheesecake is quite thin, and the apple filling is more dominant. so just adjust it to your taste

Ingredients :
PASTRY CRUST
85g (6tbsp) butter
100g (3/4cup) all-purpose flour
30g (2 1/2 tbsp) brown sugar
30g (2 1/2 tbsp) granulated white sugar
STREUSEL TOPPING
45g (1/4 cup) brown sugar
45g (1/4cup) granulated white sugar
65g (1/2 cup) all-purpose flour
1/8 tsp salt
20g (1/4cup) quick cooking oats
55g (1/4cup) butter
CHEESECAKE FILLING
225g (1 cup) cream cheese
50g (1/4 cup) granulated white sugar
1/4 tsp vanilla paste
1 egg
APPLE FILLING
2 granny smith apple
1/2 tsp cinnamon powder
1 tbsp granulated white sugar
CARAMEL SAUCE
