How To make Apple Phyllo Rolls
Butter flavored vegetable -cooking spray 2 c Apple -- diced
12 ts Ground cinnamon
1/4 ts Ground nutmeg
1 1/2 ts Brown sugar
9 Sheets commercial frozen
-phyllo pastry
thawed 3 tb Powdered sugar :
sifted
1 t Vanilla extract
1/2 ts -- water
Coat a nonstick skillet with cooking spray; place over medium heat until hot. Add diced apple; saute 8 to 10 minutes, stirring often. Add cinnamon, nutmeg and brown sugar; str well, and cook an additional 3 minutes. Remove from heat, and let cool. Coat a flat surface with cooking spray; place 1 sheet of phyllo on surface (keep remaining phyllo covered). Coat phyllo with butter-flavored cooking spray. Layer 2 more sheets phyllo on first sheet, coating each with
cooking spray. CUT Vertically into 5 equal strips; cut strips in half to make 10 pieces. Repeat process with remaining phyllo sheets, spraying each sheet with cooking spray. Spoon 1 1/2 tsp apple mixture at base of each strip; roll up, jelly roll fashion. Place, seam side down, on a baking sheet coated with cooking spray. BAKE at 375 deg for 30 to 35 minutes or until golen. Remove to wire rack to cool slightly. Combine remaining ingredients in a small bowl; stir well. Drizzle 1 1/2 ts glaze over each roll. Serve warm. IN THE OVEN 180°C (356 °F) /20 MIN
for tea:
strawberries - 100 g (3.5 oz)
orange - 1 piece
apple - 1 piece
kiwi - 1 piece
lemon juice - 20 ml (0.7 fl oz)
green tea - 1 packet
sugar - 30 g (1 oz)
Boil it over medium fire for 3 min

???? 3 apples, peeled, cored, thinly sliced (1 Granny Smith and 2 Gala apples worked well)
???? 1/4 cup organic brown sugar
???? 1 tsp ground cinnamon
???? 1/4 tsp nutmeg
???? 1/4 tsp ground cardamom
???? 2 tbsp orange juice
???? 1/2 cup chopped walnut hearts
???? 1/3 cup raisins
???? 10 thawed phyllo dough sheets
???? Confectioner’s sugar for garnish, optional

Ingredients
1 pound (454g) #4 phyllo thawed and at room temperature
12 ounces (339g) butter, melted
2-3 tablespoons granulated sugar
Garnish: confectioner's sugar and ground cinnamon
The Apple Filling:
10 apples, peeled, cored, and cubed
4 oz (113g) unsalted butter
3/4 cup granulated sugar
1 cup packed light brown sugar
4 and 1/2 tablespoons (50g) cornstarch
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/4-1/2 cup heavy whipping cream
Instructions
Make the Filling:
Melt the butter in a large skillet over medium heat. Add all of the remaining filling ingredients except for the cream. Cook the filling until it thickens. Remove from the heat and add the heavy cream. Mix and set aside to cool completely. The filling can be stored in the refrigerator in an airtight container for up to 2 weeks.
Assemble the pastries:
Remove the phyllo from its packaging and cut it into 4-6 inch squares.
Layer 6 phyllo squares over each other and drizzle them in between with melted butter. Place a tablespoon of the apple filling in the center of each stack of squares. Fold the edges towards the center and brush the top with melted butter.
Place the pastries on baking trays taht have been lined with parchment paper. Sprinkle the tops with some granulated sugar.
The unbaked pastries can be frozenfor up to 3 months. Store them in the freezer either tightly wrapped once they have frozen solid or transfer them to freezer-safe containers.
Preheat the oven to 350 °F, 180 °C.
Bake the trays on the center rack for about 25-30 minutes or until golden.
Dust with confectioner's sugar and cinnamon. Serve with Greek coffee. Kali Orexi!
Notes
Add your favorite dried fruits and ground nuts to the filling. Cranberries, raisins, walnuts, and pecans compliment the apples perfectly.

- about 6 sheets of filo pastry
For the filling :
- 15g unsalted butter
- 2 apples (~250g)
- 1 tbsp sugar
For the butter mix :
- 75g unsalted butter
