Old Fashioned Apple Pandowdy Recipe
Here's an Old Fashioned Apple Pandowdy Recipe dating back to the 18th Century. Sometimes you will see this listed as an apple pan dowdy recipe, but the taste is delicious either way you spell it. This Apple Pandowdy was a favorite dessert of First Lady Abigail Adams, wife of John Adams, the second President of the United States. This pandowdy is easy to make because it has a foolproof crust perfect for the beginner to make. You can't mess this up!
Apple Pan Dowdy has the emphasis on dowdy because it is a description of the crust topping on the apples. The crust is arranged in lots of little squares in a dowdy fashion. Dowdy means unkempt in appearance. But this is the beauty of this dessert and why you can't mess up the crust! All those little squares allow the apple juices to seep to the top of the crust and create something that is caramelized, making this dessert incredibly delicious.

400g frozen puff pastry
8 granny smith apples
1 lemon (juice & zest)
½ cup brown sugar
4 tbsp melted butter
3 tbsp plain flour
2 tsp ground cinnamon
2 tsp vanilla extract
1 tsp ground cardamom
1 tsp ground ginger
½ tsp fine sea salt
¼ tsp ground cloves
¼ tsp ground nutmeg
Directions
1. Take the frozen puff pastry out of the freezer at least 30 mins before you start to give it time to defrost.
2. Preheat the oven to 220℃/425℉.
3. Core, peel and slice each apple into 8 individual pieces (around ½ inch thick) and place them in a large mixing bowl.
4. Add the lemon juice and zest to the apples and mix to fully combine.
5. Add the brown sugar, 2 tbsp melted butter, flour, cinnamon, vanilla extract, cardamom, ginger, salt, cloves and nutmeg to the apples and mix throughly until evenly coated.
6. Pour the mixture into a medium baking dish and level out into an even layer.
7. Roll out the puff pastry to a relatively thin thickness and then cut into 1 inch squares then place on top of the apples, ensuring to push down the corners of the puff pastry squares to make sure they don't burn.
8. Bake for 20-25 minutes or until the pastry starts to brown.
9. Remove from the oven and brush the top of the pastry squares with the remaining 2 tbsp melted butter.
10. Reduce the heat to 180℃/350℉ and bake for a further 30 minutes.
11. Serve warm with a scoop of ice cream if so desired.
