How To make Apple Meringue Pie
1 Nine inch baked pastry shell
6 c Tart apples, pared and cored
1/2 c Raisins
1 c Sugar
1 tb Butter
2 tb Flour
2 Egg yolks, well beaten
Rind and juice from 1 lemon
3 Egg whites
1/4 ts Cream of tartar
1/2 ts Vanilla
6 tb Sugar
Cook apples and raisins with 3/4 cup water for 15 minutes at medium heat until apples are tender. Remove from heat; drain excess liquid. Gently fold in sugar, butter, flour, 3 egg yolks, and rind and juice from lemon. Return to heat. Cook for 5 minutes or until thickened. Spoon into baked pastry shell. Beat egg whites with cream of tartar and vanilla until soft peaks form. Gradually add sugar and beat until stiff. Spread meringue over filling, sealing to edge of pastry. Bake at 350~ or until meringue is golden.

1 1/2 tsp (7 g) Baking powder
1/3 tsp (2 g) Salt
2х (33 g) Egg yolk
Filling:
22 Oz (650 g) An apple
0.5 Oz (15 g) Unsalted butter
2х (70 g) Egg white
2.5 Oz (70 g) Granulated sugar
1.5 Oz (40 g) Powdered sugar

It's the perfect cake for any occasion! Be sure to try it and you won't be able to stop eating it!
Shortcrust Pastry:
- Wheat flour 300g
- Baking powder 1½ tsp
- Salt pinch
- Butter (cold) 150 g
- Egg yolks 3 pieces
- Sugar 45 g / 3 tbsp
Filling with apples:
- Apples 7 pieces (1,2kg)
- Sugar 30 g / 2 tbsp
- Vanilla pudding 3 tbsp
- Cinnamon 2 tsp
Meringue:
- Egg whites 3 pieces
- Sugar 60g / 4 tbsp
- Powdered sugar 60g
- Potato starch 2 tsp
Shortcrust pastry bake 15 minutes 170°C / 338°F
Cake bake 35 minutes 170°C / 338°F
Cake pan 24cm x 24 cm

Apple Meringue Cake
A simple yet delicious cake made using fresh apples.

Ingredients:
3 Apples
Lemon juice – 3 tsp
Cinnamon powder – 1 tsp
Plain flour (to add into the apples) –18 g or 2 tbsp.
Dry Ingredients for cake:
Plain flour – 175 g or 1 ½ cup
Baking powder – 5 g or 1 tsp
Salt – 1 pinch
Wet Ingredients for cake:
Butter – 60 g or ¼ cup
Powdered sugar – 75 g or ½ cup + 1 tbsp.
Egg yolks – 2
Curd / Yoghurt – 30 g or 2 tbsp.
Vanilla Extract – ½ tsp
For meringue:
Egg whites- 2
Powdered sugar – 75 g or ½ cup + 1 tbsp.
